I tried this Raw Honey on top of buttermilk / sweet potato pancakes, potato bread, so delicious!

I grew up eating more raw cane sugar than honey and when my mom would give me honey, it would be served with lime juice and red raw onions, mostly when I was feeling under the weather. Rosemary is also another ingredient used as medicinal herb in my family, so you can imagine my face the first time I had Rosemary Bread, but I’ll tell you more about that story another time.

I’ve always been a fan of citrusy flavors, specially limes and one of my favorite snacks used to be either fresh squeezed lime juice with a pinch of salt, or mixed with honey, or both!

I’m not familiar with the way honey is produced in Panama, even less in the United States. Â I tried raw honey for the first time a few years ago and the term “Fair trade” is something I’ve heard more about in the past years, and I heard it regarding about chocolate and coffee. Â I still have much to learn about this term and type of practice, since it’s a wonderful experience when you can get a product that brings together, fair trade and deliciousness.

“Fair Trade certification delivers honey straight from Mexico and Brazil..” “…Producers are small family farms organized in cooperatives or associations, which they own and govern democratically.” – FairTradeUSA.org

A few days ago I found myself between the isles of Whole Foods.  I went strictly to buy coconut nectar or something like that.  You see, I know sugar is sugar, and calories are calories and between the Vegan and Paleo diet advocates, both supporting and contradicting all sorts of sugars, I swear, it can get overwhelming.  So while I was holding a bag of $10 Raw Coconut Sugar and a $8 bottle of Agave nectar, I asked myself: “What do I want to taste the next time I eat pancakes, or a toast with butter, and I remembered, honey”.  I googled brands for a few minutes and some sites mentioned Wholesome Sweeteners Raw Fair Trade Organic Honey, so I bought a $6.49 bottle of honey. (Yes, I paid for this product, and no, I was not sponsored by Wholesome Sweeteners).

So far, no regrets! I tried a little spoonful, its creamy texture gave me tons of ideas for sauces and baked goods I could make with it. Â I added a pinch of salt, heaven! Â I spread it on top of buttermilk pancakes, potato bread, sweet potato gluten-free pancakes (recipe coming up soon!) and still delicious. Â The next time I’ll try it with fresh squeezed lime juice for old times sake and maybe in a drink. Â I’ll keep you posted! (I see baklava and honey tarts in the near future!).

Conclusion:Â this honey has a strong nectar flavor, it comes in a plastic container (why!?), it’s not sugary (to my taste, at least my teeth never hurt when I tried it) and it is a bit on the expensive side.

Tell me about your favorite Honey brands, if you don’t like honey or using it, what product do you recommend? Â Have you tried Manuka Honey?

Note:Â My mom read this post and told me the main reason why we never used honey for cooking/eating is because we could barely afford it and when we would buy it, it was to be used as a medicine.

¡a comer!

¡a comer!

Chocolate Brownie Mix, no shame baby!

I love trying new products and though you can make brownies from scratch quickly, I still wanted to try a Gluten-Free version and I saw this package at a Target and got it!, (I think I’ve seen it too at Whole Foods too), they sell also sell Pancake and Scones mixes I believe. Â

I purchased the small bag and followed the directions which only asked for oil and water, I used organic coconut oil, added vanilla extract and chocolate chips.

It took me 2-3 minutes to get everything, mix and and the oven was already hot (I was baking Kale chips before making the brownies, I just can’t stop baking kale, something I never thought I would say) The mix baked in 13-14 minutes.  It was so quick!  in less than 20 minutes I was already eating brownies ha!

Overall it came out fudgy, soft, I loved the chips I added but they were semisweet so the brownie ended up being too sweet for my taste, I served with a pinch of sea salt on top to balance it out. Â Next time I would definitively add walnuts and bittersweet chocolate chips.

What’s your favorite Gluten-Free Brownies Recipe?

I don’t dare to bake in the microwave haha, it was already a bit strange using a mix, maybe someday!

I grew up afraid of brussels sprouts, mostly because my mom never cooked these for me or my brother and sister. Â I would watch movies and the kids would always hate brussels sprouts so I never thought I was missing anything.

I’m sure I smelled it from someone’s lunch box and then it wasn’t too pleasant (I do not like reheated brussels sprouts, it’s a no no for me!).

Then I moved to US and worked with Chef Andy and it was in the menu,  these veggies were not part of my station but I got to smell the roasted brussels sprouts the other cooks would work on daily and then before serving saute in butter, they were delicious and it totally changed my perspective of these vegetables.  Another time I went to my favorite Pizza place *Pupatella* and I found this appetizer, Fried Brussels Sprouts with Balsamic Vinegar and Green Apples, I thought it was too strange, but then I ordered it, and from that day on I have kept ordering it every time I go there.

I wanted to have my own version of brussel sprouts, I remembered what I like the most of each dish I’ve tried, crispiness, saltiness, etc.

Also I was sent a bottle of Sacha Vida Oil and I wanted to try it in a dressing, but it is too cold, and I am not craving any cold salads so I decided to try this oil to roast the sprouts and the flavor worked pretty well, light nuttiness, mild flavor that didn’t overpower the sprouts.

So here we go:

Serves 4
Ingredients:
– Â 1 lb Brussels Sprouts
– Â 1 Green Apple
– Â 1.5 tbs of Sacha Inchi Oil
– Â 1/4 cup dried cranberries
– Â 1/4 cup roasted walnuts
– Â 4 tbs of balsamic vinegar reduced to half (if your vinegar is too liquidity, if it’s thick enough just use 2 tbs of the vinegar)
– Â Salt & Pepper

Directions:Â
– Â Preheat oven to 375F
– Â Slice your apples in cubes, or julienne, as you prefer.
– Â Peel the outer skin of the brussels sprouts. Â Trim the end and cut them in half.
– Â Toss them in a mixing bowl with the oil, salt and pepper.
– Â Place the sprouts on a baking sheet for 10-15 minutes, turn them and bake for another 10 minutes (I like mine really roasted so the last 10 minutes I’ll increase the heat to 400F, but don’t let them burn!)
–  Once they are ready place back in mixing bowl with the vinegar, walnuts, apple and cranberries, toss and serve immediately!

I love my salad warm and I usually have it as a started or as a side dish!

Let me know what’s your favorite way to cook Brussels Sprouts!

I did some research and though I’m not a big fan of faux meats I have a found a few ones I like to indulge once in a while so I thought the *Tofurky Roast* seemed like a good dish to add to the menu. On Thanksgiving Day I thawed it, sauteed it, basted, etc.  I followed all of the instructions, added extra kick/spice touches and yet I didn’t enjoy it a bit.  It wasn’t horrible, it had a strange flavor even after I sliced it and sauteed with garlic and olive oil.  Since I didn’t like it much, I decided to do something else with it so it wouldn’t go to waste.  I chopped it into mini cubes to mix with a fried rice and with half of my stuffing.  The flavor was so strong I didn’t enjoy the fried rice or the stuffing at all. Some folks say may say I over cooked, etc.. but I followed the instructions verbatim, and heck I have given good flavor to very bland faux meats in the past, but this I didn’t manage to doctor and for $8.00 it’s not worth the hassle. I have to add though that I’ve tried 2 sliced faux cured meats from Tofurky and they made tasty sandwiches, so either I don’t know how to work with a Tokurfy Roast, or that’s just how it’s supposed to taste and it’s simply not my thing. If you are planning to give it a try, consider this recipe by Bedazzled Vegan, this blog really seems to enjoy it so there you go: Recipe for Roasted Tofurky with Caramelized Onions & Cherries. On my side I have to say sorry Tofurky Roast, I don’t see you in my future dinners but you were fun to play with in the kitchen!
