<p>These past few years I have realized how serious some folks take their horseradish. Â J and his dad both expect horseradish in their sandwiches and trust me, if a restaurant offers a Reuben or a burger, they better have horseradish or they won&#8217;t dine in there.</p>
<p>I became more acquainted with fresh horseradish through Chef Andy, shucking oysters, preparing the dayâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />s mignonette and grating fresh horseradish on requests.Â Â I never grew up eating raw oysters with horseradish, rather a squirt of lime and-or cooked in soups.</p>
<p>Back to the horseradish, I don&#8217;t need to explain why it is awesome to make fresh horseradish sauce, and how versatile it is on pasta, sandwiches, wraps, chips, vegetables, etc. I used Alton Brown&#8217;s recipe <a title="Horseradish Cream Sauce" href="http://www.foodnetwork.com/recipes/alton-brown/horseradish-cream-sauce-recipe/index.html" target="_blank"><strong>(see here)</strong></a> and modified based on what I had in my kitchen, I encourage you do the same and try this goodness at home soon!</p>

Â Nunca crecÃ­ comiendo ostras crudas con rÃ¡bano picante, mÃ¡s que todos con un poquito de limÃ³n o cocinadas en sopas.</em></p>

<p><strong>Salsa de RÃ¡bano Picante &#8211; Horseradish Sauce</strong><br />
Serves: 1Â¼ cups â€“ Prep Time: 10 minutes</p>
<p><strong> Ingredients:</strong><br />
1 cup creme fraiche<br />
1/3 cup grated fresh horseradish<br />
1 tablespoon Dijon mustard<br />
1 teaspoon rice vinegar<br />
1/3 teaspoon kosher salt<br />
1/4 teaspoon freshly ground black pepper<br />
1 teaspoon of flat parsley, chopped</p>
<p><strong>Instructions:</strong><br />
Whisk all ingredients to blend in mixing bowl. Taste for seasoning. Cover and chill up to 2 weeks.</p>
