<p style="text-align: left;">Kekis were one of my favorite pastries when I was in school. Â I would buy 3 of those cookies for 25 cents. Â They were cheap, filling and always boasting with flavors of coconut and ginger. Â As I got older I became more selective about my Kekis and would expect certain details such as: pieces of coconut, a more dense texture and an intense raw sugar cane and ginger taste.</p>
<p style="text-align: left;">I&#8217;m sharing a different recipe than the one I usually bake, inspired byÂ <a title="Cooking Diva Kekis Recipe" href="http://cookingdiva.net/blog/comments/la_receta_del_dia_keki_de_coco_y_miel_de_panama/" target="_blank">Cooking Diva&#8217;s original recipe.</a> Â The one I baked this past Sunday uses Almond Flour to replace half of the All Purpose Flour and I didn&#8217;t use molasses. Â Also, this time I bought the shredded coconut instead of shredding it myself (huge difference in flavor, so yes it is worth it to do the extra work).</p>
<p style="text-align: left;">Some other favorite kekis are the one I used to buy when road tripping in Panama, right before AntÃ³n, CoclÃ©. Â Sometimes I could find them in the city around some semÃ¡foros (traffic light intersections). Â I think a friend of mine loved making sandwiches with it using butter and American cheese. Â What I would give to be near Rio Hato right now.</p>

<p>Â <strong>Ingredients:</strong></p>
<p>5 tbs Coconut Butter ( I used <a title="Coconut Butter" href="http://artisanafoods.com/products/coconut-butter" target="_blank">Artisana</a> but you can use whichever fat you prefer)<br />
1 cup Raspadura (Sugar Cane Syrup)<br />
2 eggs or vegan replacer like 2 tbs of flaxseeds/chia seeds in warm water<a title="Egg Replacer in Your Cooking" href="http://www.wikihow.com/Replace-Eggs-in-Your-Cooking" target="_blank"><strong> (click here for how to replace eggs in your recipes)</strong></a><br />
1/2 cup Almond Flour<br />
1/2 cup AP Flour<br />
1 tsp Baking Powder<br />
1 tsp Cinnamon<br />
1 tsp Ginger Spice<br />
Pinch of Salt<br />
3/4 cups Toasted Shredded Coconut<br />
2 tsp grated Ginger<br />
1/2 roasted Cashews (optional)</p>
<p><strong>Directions:</strong></p>
<p>Pre-heat oven at 350F<br />
Mix all your dry ingredients and pass through a sieve to combine.<br />
In a separate bowl mix the sugar and fat until you get a creamy texture.<br />
Add the eggs to the liquid and whip until fully mixed, then add the grated ginger.<br />
Add the dry mix to the liquid one, alternating by cups with the toasted coconut.<br />
Scoop the batter as if they were cookies or use mini muffin tins.<br />
I placed one cashew per mini muffin before adding the batter.</p>
<p>NOTE: Â If you like sweeter desserts feel free to increase the sugar.<br />
Experiment using coconut sugar.<br />
Increase the fat for a more moist muffin.<br />
Try 3 tsp of grated ginger if you prefer a stronger ginger flavor.</p>

<p>This is a sampler box and though they all come in mini sizes, for $20 this so far has been a great deal! Â I&#8217;ve tasted that brand of Raw Cashew Butter <a title="Artisana Raw Cashew Butter" href="http://www.artisanafoods.com/products/cashew" target="_blank"><strong>(Artisana)</strong></a> and it&#8217;s delicious, creamy, just perfect.</p>

<p>I already ate the chocolates, my goodness <a title="New Tree Website" href="http://www.newtree.com/en_us/" target="_blank"><strong>New Tree</strong></a> is doing things right. Â Since I went vegan I miss chocolate so much and in the past I would have never tried Ginger-Chocolate but I can happily say *this is so good*, it was really tasty and I will be ordering this chocolate online since I haven&#8217;t seen this brand around my local grocery stores.</p>
<p>As I start tasting/testing the rest of the samples I&#8217;ll keep updating this post. Â I&#8217;m very pleased with this assortment and I thank Vegan Cuts for their great and quick customer service, in less than 24 hours I got a tweet and email back from them about my inquiry on my not-really-missing package.</p>
<p>I look forward to trying this Snack Box again soon! Â Hopefully I&#8217;ll get caramels or boozy chocolates in the future. Hint, hint ;)</p>
