</a><strong>Pancakes Esponjosos de Vainilla</strong></p>
<p>Mis recuerdos de pancakes (hotcakes, tortitas o crepes) empieza desde cuando era una chiquilla con mi Mami haciendo las de cajeta (algunas cosas mi madre cocinaba de cajeta o enlatados, pancakes era una de esas). La marca preferida era Aunt Jemima.</p>
<p>Recuerdo a mi mami haciendo esto para 5 personas, quÃ© dolor de cabeza porque tenÃ­a que hacer 10 pancakes por lo menos, por eso recuerdo que mi Mami nunca estaba muy emocionada para cocinar esto, y como habÃ­a que comÃ©rselo en el momento, todavÃ­a menos. TambiÃ©n recuerdo ver a mi tÃ­a, que mezclaba huevos, harina, leche y manteca o aceite para hacerlas y yo pensaba &#8220;Pero porquÃ© la de ellas no son asÃ­ esponjosas como las de mi mamÃ¡&#8221;, (mi tÃ­a nunca usÃ³ polvo para hornear ni bicarbonato).</p>
<p>Y tambiÃ©n me encantaba ese sirope de Aunt Jemima y muchas veces rechazaba la miel pura de caÃ±a que traÃ­a mi papÃ¡ de la finca de mi tÃ­o abuelo, o la miel de abeja (si ya sÃ©, quÃ© tonta je). Mantequilla y salchichas fritas o rebanadas de queso amarillo como acompaÃ±antes, jugo de naranja o tÃ© con leche, (no me dejaban tomar cafÃ©).</p>
<p>Algunas veces me llevaban a diferentes lugares de comida rÃ¡pida, o a veces viajÃ¡bamos al interior y nos quedÃ¡bamos en hoteles, era una felicidad ver pancakes en el menÃº. Y de todo comÃ­ cuando entrÃ© a los 20 aÃ±os, excepto pancakes. Â No fue hasta mis 26 que probÃ© unos pancakes cuando nos mudamos a Washington DC, y al inicio eran de franquicias como IHOP, y aunque todos hablen de como &#8220;comida de franquicia es mala, Bla Bla), eran deli, pero entre mÃ¡s uno practica recetas o visita otros lugares que utilizan ingredientes frescos, menos disfruta uno esas comidas de franquicias (nunca he probado Denny&#8217;s, Cracker Barrel o Silver Dinner, asÃ­ que Â no les puedo criticar).</p>

</a><strong>Mantenga los pancakes cerca de la estufa para que sigan calentitos</strong></p>
<p><strong>Receta para 6 Pancakes</strong></p>
<p><strong>Ingredientes</strong><br />
3/4 taza de Leche de Almendras<br />
2 cucharadas de Vinagre de Arroz<br />
1 taza de harina de todo propÃ³sito<br />
1/4 taza de Miel de Alzahar (Orange Blossom Honey)<br />
2 cucharadas de azÃºcar morena<br />
2 cucharaditas de Polvo de Hornear<br />
1 cucharadita de Bicarbonato de Sodio<br />
1/2 cucharadita de sal<br />
1 Huevo<br />
2 cucharadas de Aceite de Coco<br />
1 cucharadita de Extracto de Vainilla</p>
<p><strong>Direcciones</strong><br />
Combinar la leche de almendras y el vinagre en un bol pequeÃ±o de 10-12 minutos y reserve.<br />
Combine los ingredientes secos (polvos, harina y sal) y reserve.<br />
En otro bol mezcle la miel, azÃºcar, el huevo y extracto de vainilla (esto yo sin miedo lo mezclÃ© en la batidora)<br />
Luego de agregue el aceite de coco al bol con ingredientes lÃ­quidos.<br />
Ahora combine la mezcla del vinagre en el bol de ingredientes lÃ­quidos y en tres partes mezcle en el bol de la harina.<br />
La masa es un poco gruesa y esponjosa y asÃ­ debe ser!<br />
Caliente una sartÃ©n con un poco de aceite de coco y a cocinar los pancakes!</p>
<p><strong>NOTA:</strong><br />
1. Â Si desea agregar frutas secas o moras, es buen momento agregarlas una vez ponga un poco en la sartÃ©n de la mezcla.<br />
2. Â Esta receta debe funcionar bien con mantequilla o margarina.<br />
3. Â Yo siempre sirvo pancakes con algo salado, en este caso hice una torta de chorizo vegetariano y vegetales para hacer contraste.<br />
4. Â Si vas a cocinar muchas porciones, sugiero calentar el horno para mantener los pancakes calientitos hasta que vaya a servir.</p>

<p>Just when you find yourself thinking what to eat&#8230; For me it is difficult at this right moment, struggling to lose weight, be healthy and strong and also aiming to make everything delicious makes creativity hit you in the head few times and depending on your mood well it might work&#8230; and sometimes i might not.</p>
<p>Somedays I struggle so much with &#8220;what&#8217;s the right thing to eat?&#8221; that I find myself having an apple, half yogurt or just plain water, lunch arrives and I want to eat the whole world&#8230; fried&#8230;. with cheese&#8230; and juice. So yes imagine.</p>
<p>Anyways, this post is for those like me who want breakfast, who love breakfast, who can&#8217;t have pancakes and waffles everyday, or fried bread (hojaldras) neither corn empanadas. Â This is still a tasty meal and depending on the season you can get creative with the options for vegetables.</p>
<p>&#8212;</p>
<p><strong>Eggs &#8211;&gt;</strong> <em>you can go 2 ways, 1 tbs of butter or grapeseed oil or any other oil, fry them? Â I have a great non stick pan so iÂ didn&#8217;tÂ have to add anything so no extra calories (I know boring). but proper farm eggs, cayenne, touch of salt &amp; pepper voila!</em></p>
<p><strong>Spinach&#8211;&gt;</strong> <em>you can cook a lot of it and the extra one use it for lunch, mix it in your stew or beans or rice or potatoes, spinach just go perfect with anything. Â I saute it w/ touch grape seed oil on hot pan, touch of salt, once it is cooked and taste as you want (the whole debate of if cooked spinach is better than raw that&#8217;s not for me to explain I eat them both ways mostly weekly and so far so good). Â Adding a bit of smashed garlic before sauteing the spinach does wonders to the flavor, as well twist of lemon juice and pepper!!</em></p>
<p><strong>Vegetables&#8211;&gt;</strong> <em>depending on the season I go about the vegetables, you can always get onions, garlic and peppers, right now tomatoes are gorgeous so I add tomatoes and zucchini&#8230; the herbs change completely the dish.. I finished this one with chopped cilantro..some others prefer parsley, basil, chervil, you choose it and experiment!!</em></p>

<p>Overall I just love making a dish many times with few changes and trying them with different spices and herbs because it brings up different sparks on the vegetables.</p>
<p>This breakfast was made in about 15 minutes. Â Yes I&#8217;m a Line Cook at the restaurant so I may be faster than a regular home cook for some prep and cooking, but I remember before working for the restaurant to save time I would prep vegetables the night before so for breakfast I could fix myself and the Boy&#8217;s meal pretty fast.. if you keep your kitchen always organized and clean, doing prep ahead you will notice how fast you can get around meals.</p>
<p>It&#8217;s midday and now I think of lunch.. that will be for another post.</p>
