I prefer to make my desserts from scratch, everything but ice creams. Â Sometimes I don’t feel like spending too much time in the kitchen or sometimes unexpected guests don’t leave you enough time to prepare something in advance. That doesn’t mean you can’t impress and/or do a great job with your food. Â Everything, from starters, entrees to desserts, can be store bought and “doctored” at home.

There are several reasons why I prefer to make my own food such as: it’s less expensive and quality control. Â I like to have control of what I’m I’m serving to my guests. Â The day when I made these parfaits I wasn’t in the mood for cooking, but I was in the mood for eating, I always am! And I’ve tried some store bought parfaits and they haven’t impressed me so I usually buy my favorite ingredients and prepare quickly at home.

Raspberries are not in season so if you don’t have them available at your store, try this parfait with other berries or any tropical fruits you can get your hands on!

Easy Lemon-Raspberry Parfaits
Serves 4 -Â Prep time: 15 minutes

Ingredients
• 2, 1/2 inch, slices of Lemon Pound Cake, cubed in small pieces (store bought or try this recipe by The Realistic Nutrtionist)
• 2 cups of Raspberries
• 1 cup Whipped Cream
• 1 cup Lemon Curd (store-bought or try this recipe by  Savory Simple)
• 1 cup Pineapple, chopped in small pieces
• 1 cup Vanilla Ice Cream

Directions:
In 4 small glasses add a layer of pound cake pieces, then add a spoonful of the lemon curd and the pineapples. Â Then, add a spoonful of vanilla ice cream, another spoonful of lemon curd and top it with whipped cream and raspberries.

NOTE:Â
– Â A variation for this recipe could be replacing the pineapple with mango, use strawberry marmalade instead of lemon curd and orange sorbet instead of vanilla ice cream to add a kick to the parfait.

Parfait de Limón Cuajado y Frambuesas Facilito

A mí me encanta hacer mis postres caseross.
