<p>I published this podcast episode back at the end of April and I could tell you so many of the excuses I have for not having shared the recipe until now, but instead I&#8217;ll just keep it short and sweet and share the recipe.</p>

<div><strong>Chicken Stock Recipe </strong><em>(this will yield enough to make arroz con pollo (twice the recipe), or just save the chicken stock and shredded chicken for another time)</em></div>

<div>3.5 lb chicken thigh (bone &amp; skin in)</div>
<div>3 medium size carrots</div>
<div>1 medium size yellow onions</div>
<div>scallion bulbs</div>
<div>3 garlic cloves</div>
<div>cilantro stalks</div>
<div>1 bay leaf</div>
<div>culantro leaves (2-3)</div>

<div><strong>Instructions:</strong></div>
<div>&#8211; Fill up a pot with water until you cover all the chicken, add chopped vegetables, herbs stalks. and bay leaf</div>
<div>&#8211; Bring to a boil and then lower the temperature and simmer 30-45 minutes (until the chicken is cooked).</div>
<div>&#8211; Remove all the chicken from the pot, continue simmering the stock.</div>
<div>&#8211; Debone chicken and remove skin and toss (bones &amp; skin) back inside the pot, you can simmer in low for 2-3 hours, depending on how much time available you have and how much you want to reduce as well you can either add more water to the stock, or you can make sure you get 2-4 cups and your stock will have a wonderful strong chicken delicious taste.</div>
<div>&#8211; While the stock continues to simmer you can now shred the chicken with your hands and reserve.</div>
<div>&#8211; Pass stock through a sieve to make sure it has no bits, squeeze those juice from the bones, skin, and vegetables (seriously, look at the photo above on how much I squeezed them skin/bones/veg).</div>

<div><strong>Note:</strong> When the stock cools off you can skim the fat off from the top and save it to use to cook the arroz con pollo or any other delicious meal; chicken fat is so delicious I actually use it a lot for cooking over other animal fats.</div>

<div>1 lb of white rice</div>
<div>2 cups of shredded chicken</div>
<div>2-3 cups of chicken stock</div>
<div>1 tbs tomato paste</div>
<div>3 garlic cloves, minced</div>
<div>Scallions, chopped</div>
<div>Cilantro, chopped</div>
<div>Culantro, chopped</div>
<div>Chicken Fat</div>
<div>Annatto powder</div>
<div>Turmeric Powder</div>
<div>Paprika</div>
<div>Garlic Powder</div>
<div>Onion Powder</div>
<div>Cumin</div>
<div>Worcestershire Sauce</div>
<div>Soy Sauce</div>
<div>Black Pepper</div>
<div>Red Pepper, chopped</div>
<div>Green Peas</div>
<div>Carrot, chopped</div>
<div>Onion, chopped</div>
<div>Olives</div>

<div><strong>Instructions:</strong></div>
<div>&#8211; Rinse your rice in cold water 3-4 times to remove some starch.</div>
<div>&#8211; Bring 2 cups of stock to a boil, add tomato paste, pinch of turmeric, 1-2 teaspoons of the annatto, pinch of all the spices, and salt. Taste and adjust as you go, it is easier to add more seasoning later.</div>
<div>&#8211; Add the rice, make sure there is around 3/4-1 inch of the stock above the rice, cover the pot, temperature on medium.</div>
<div>&#8211; Add the garlic, cilantro, culantro, red pepper, and add around 2-3 tbs of chicken fat.</div>
<div>&#8211; Cover and simmer until the rice is done, if you think it&#8217;s too watery and are afraid of it getting too porridge like don&#8217;t add more stock and finishing i without a lid.</div>
<div>&#8211; In a separate pan, caramelize your onion in chicken fat, medium high heat, reserve, then heat up pan again with chicken fat and caramelize the carrots a little as well.</div>
<div>&#8211; Reheat pan with chicken fat if you still have some or olive oil and saute the shredded chicken in chicken fat with annatto and turmeric. This can be done in two minutes since your chicken is already cooked.</div>
<div>&#8211; Add back the cooked carrots and onions. Turn off your pan.</div>
<div>&#8211; Lastly, add the peas to your shredded chicken mixture, if you get frozen peas: rinse them under room temperature water and then mix in with the carrots, add the onions back and once your rice is done you can mix it all together. (make sure you are seasoning as you go, with salt, soy sauce, and/or worcestershire sauce.</div>

<div><strong>FINISHING THE ARROZ CON POLLO</strong></div>
<div>&#8211; I like to finish my arroz con pollo in the oven, I mix everything in this stage (olives/capers, shredded chicken, and rice with vegetables) and spread it all on an oiled (covered in foil if you prefer) baking sheet, at 350F-400F until your preferred doneness. You might have to stir a few times to make sure the whole rice is cooked as you like it.</div>

<div><strong>NOTE 1:</strong> I&#8217;ll keep coming back to this recipe and make it as clear as possible, but this is really how I usually make my arroz con pollo. I have what I call a &#8220;lazy version&#8221; where I use Maggi cubes (literally has turmeric/annatto/msg and a bunch of delicious stuff that saves time). You can cook all together as many people do.</div>
<div><strong>NOTE 2:</strong> I&#8217;m careful with the salt because I add a lot of olives and capers to my arroz con pollo at the end so they retain their crunch and saltiness, this is why I make my last adjustment right when I place the baking sheet with the arroz con pollo in the oven.</div>
<div><strong>Optional for serving:</strong><br />
&#8211; Sliced toasted almonds</div>
<div>&#8211; Raisin haters, some people might actually add raisins, but it is not common, I do love raisins in my arroz con pollo!</div>
<div>&#8211; For a more Panamanian traditional party way: serve your arroz con pollo with a side fried yellow plantains (tajadas or caramelized plantains) also with a Russian Potato Salad. Trust me, listen to the podcast on the reason why, haha!</div>

<p>Mis recuerdos de pancakes (hotcakes, tortitas o crepes) empieza desde cuando era una chiquilla con mi Mami haciendo las de cajeta (algunas cosas mi madre cocinaba de cajeta o enlatados, pancakes era una de esas). La marca preferida era Aunt Jemima.</p>
<p>Recuerdo a mi mami haciendo esto para 5 personas, quÃ© dolor de cabeza porque tenÃ­a que hacer 10 pancakes por lo menos, por eso recuerdo que mi Mami nunca estaba muy emocionada para cocinar esto, y como habÃ­a que comÃ©rselo en el momento, todavÃ­a menos. TambiÃ©n recuerdo ver a mi tÃ­a, que mezclaba huevos, harina, leche y manteca o aceite para hacerlas y yo pensaba &#8220;Pero porquÃ© la de ellas no son asÃ­ esponjosas como las de mi mamÃ¡&#8221;, (mi tÃ­a nunca usÃ³ polvo para hornear ni bicarbonato).</p>
<p>Y tambiÃ©n me encantaba ese sirope de Aunt Jemima y muchas veces rechazaba la miel pura de caÃ±a que traÃ­a mi papÃ¡ de la finca de mi tÃ­o abuelo, o la miel de abeja (si ya sÃ©, quÃ© tonta je). Mantequilla y salchichas fritas o rebanadas de queso amarillo como acompaÃ±antes, jugo de naranja o tÃ© con leche, (no me dejaban tomar cafÃ©).</p>
<p>Algunas veces me llevaban a diferentes lugares de comida rÃ¡pida, o a veces viajÃ¡bamos al interior y nos quedÃ¡bamos en hoteles, era una felicidad ver pancakes en el menÃº. Y de todo comÃ­ cuando entrÃ© a los 20 aÃ±os, excepto pancakes. Â No fue hasta mis 26 que probÃ© unos pancakes cuando nos mudamos a Washington DC, y al inicio eran de franquicias como IHOP, y aunque todos hablen de como &#8220;comida de franquicia es mala, Bla Bla), eran deli, pero entre mÃ¡s uno practica recetas o visita otros lugares que utilizan ingredientes frescos, menos disfruta uno esas comidas de franquicias (nunca he probado Denny&#8217;s, Cracker Barrel o Silver Dinner, asÃ­ que Â no les puedo criticar).</p>

</a><strong>Mantenga los pancakes cerca de la estufa para que sigan calentitos</strong></p>
<p><strong>Receta para 6 Pancakes</strong></p>
<p><strong>Ingredientes</strong><br />
3/4 taza de Leche de Almendras<br />
2 cucharadas de Vinagre de Arroz<br />
1 taza de harina de todo propÃ³sito<br />
1/4 taza de Miel de Alzahar (Orange Blossom Honey)<br />
2 cucharadas de azÃºcar morena<br />
2 cucharaditas de Polvo de Hornear<br />
1 cucharadita de Bicarbonato de Sodio<br />
1/2 cucharadita de sal<br />
1 Huevo<br />
2 cucharadas de Aceite de Coco<br />
1 cucharadita de Extracto de Vainilla</p>
<p><strong>Direcciones</strong><br />
Combinar la leche de almendras y el vinagre en un bol pequeÃ±o de 10-12 minutos y reserve.<br />
Combine los ingredientes secos (polvos, harina y sal) y reserve.<br />
En otro bol mezcle la miel, azÃºcar, el huevo y extracto de vainilla (esto yo sin miedo lo mezclÃ© en la batidora)<br />
Luego de agregue el aceite de coco al bol con ingredientes lÃ­quidos.<br />
Ahora combine la mezcla del vinagre en el bol de ingredientes lÃ­quidos y en tres partes mezcle en el bol de la harina.<br />
La masa es un poco gruesa y esponjosa y asÃ­ debe ser!<br />
Caliente una sartÃ©n con un poco de aceite de coco y a cocinar los pancakes!</p>
<p><strong>NOTA:</strong><br />
1. Â Si desea agregar frutas secas o moras, es buen momento agregarlas una vez ponga un poco en la sartÃ©n de la mezcla.<br />
2. Â Esta receta debe funcionar bien con mantequilla o margarina.<br />
3. Â Yo siempre sirvo pancakes con algo salado, en este caso hice una torta de chorizo vegetariano y vegetales para hacer contraste.<br />
4. Â Si vas a cocinar muchas porciones, sugiero calentar el horno para mantener los pancakes calientitos hasta que vaya a servir.</p>

<p>On the days I wouldn&#8217;t know what to cook while in high school I always relied on sausages (hot dogs links) to slice and cook with tomato paste, garlic, onions and some ketchup. Â That dish would go great with anything, spaghetti, rice, roasted potatoes, fried yuca, potato salad, pasta salad, cole slaw, etc.</p>
<p>It was one of my staple dishes and the secret of why this simple dish was a success, is the same reason this recipeÂ I&#8217;m sharing today is also another success, SEAR ALMOST EVERYTHING!</p>
<p>Nowadays I&#8217;ve been cooking a similar version, except this time <a href="http://www.vegansociety.com/become-a-vegan/why.aspx"><strong>I cook *vegan*</strong></a> (or so I try), and I found the <strong><a href="http://www.lightlife.com/Vegan-Food-Vegetarian-Diet/Veggie-Hot-Dogs">Smart Dogs</a>Â </strong>and let me tell you this, these protein links are so versatile you won&#8217;t believe the dishes I&#8217;ve come up with!</p>
<p>I&#8217;ll go back to basics sharing the recipe for this important simple dish in my life, adding some grown up touches (ahem.. Â more veggies), because oh well now I love mushrooms and I&#8217;m not 12 anymore!</p>
<p>In PanamÃ¡ we call this dish *Salchichas Guisadas*, now this my vegan version of it, so here we go:<br />
<strong></strong></p>
<p><strong>Salchichitas Guisadas Veganas: (Vegan Dogs links in garlicky tomato sauce)</strong></p>
<p>Serves 4: &#8211; Prep Time + Cooking: 15-20 minutes.</p>
<p>1/2 package of a Smart Dogs (protein links, I prefer regular size but you could use the jumbo too)<br />
1 tbs of minced fresh garlic<br />
3 tbs of sliced scallions (2 tbs of the hard side and 1 tbs of the dark green softer side)<br />
1 cup of sliced peppers<br />
5 oz (approxÂ 1/2 cup) of sliced shiitake mushrooms) (or any of your favorite mushrooms)<br />
1 tsp of Sriracha<br />
1 tsp of Bean Paste<br />
2 tsp of Thin Soy Sauce (regular soy sauce might be saltier so watch out!)<br />
1/2 tsp of Raspadura (raw sugar or maple syrup, or something sweet like ketchup, but not too strong like molasses!)<br />
2 tbs of chopped fresh cilantro<br />
1 tbs of tomato paste</p>
<p><strong>Directions:<br />
</strong>1. Â SauteÃ© your sliced mushrooms (add pinch of salt) with a little bit of oil in a hot pan, (on the photo it shows the level of caramelization of 4 minutes) you can go less or more time.<br />
2. Â Reserve mushrooms and add another 1-2 tbs of oil to the same pan and wait until is really hot again, then sauteÃ© the sliced dogs now, until brown.<br />
3. Â Add to the mushrooms the garlic and cook for 1-2 minutes (be careful not to burn the garlic, reduce heat at this point if necessary).<br />
4. Â Add the sliced peppers and the 2 tbs of the scallions (the harder side). Add the bean paste and tomato paste.<br />
5. Â Mix everything together and at this point you can add the rest, thin soy sauce, sriracha and your sweet liquid (raspadura).<br />
6. Â Add 2 ounces of water, and keep adding more water until the consistency you prefer, if it&#8217;s too thin just add more tomato paste or reduce a bit longer but your veggies will get soggy : (<br />
7. Â Cook and simmer for 2-3 minutes, adding spices if you want (cumin, paprika, etc. Â I like a touch of hot mustard).<br />
8. Â Before turning off the heat add rest of the scallions and the cilantro.<br />
Ready to serve, it lasts in the fridge 2-3 days!</p>
<p><strong>NOTE:</strong> You don&#8217;t need Sriracha for this sauce, if you prefer a spicy chili sauce, or no spicy whatsoever it will work just fine. Â I don&#8217;t add salt to the dish because I&#8217;m using Thin Soy Sauce, if you don&#8217;t have any soy sauce, adjust the seasoning with salt, but remember to taste, taste and taste!Â Â You could also add spicy mustard, a touch of vegan mayonnaise or sour cream, be creative!</p>
<p>My favorite sides with this dish are: fried yuca, <a href="http://www.food.vanevalentine.com/wp-content/uploads/2012/01/desayunoPanama.jpg">fried bread (hojaldre)</a> or fried green plantains, nevermind the <a href="http://www.simplyrecipes.com/wp-content/uploads/2009/11/sloppy-joe.jpg">Sloppy joe&#8217;s,</a> these salchichitas make a great sandwich too! Â If you want to go with a healthier side dish I suggest having it with steamed brown basmati rice and roasted brussels sprouts, yup still delicious.</p>
