<p><span style="font-weight: 400;">Con la llegada de las lluvias, los dÃ­as grises y calores intensos fue muy fácil que se me antojara hacer un batido refrescante. Usualmente me preparo batidos de vegetales y frutas durante la semana, bajos en calorías, para snack o para reemplazar una comida. Pero, algunas veces quiero un helado o un batido, o un trago, así­ que ¿porqué no tenerlo todo en un mason jar? </span></p>
<p><span style="font-weight: 400;">Es muy fácil crear cosas deliciosas que no sean nutritivas y llenas de componentes dañinos para nuestra salud. Sin embargo, también podemos preparar recetas que sean deliciosas y que al mismo tiempo aporten algún aspecto nutritivo a nuestras dietas. </span></p>
<p><span style="font-weight: 400;">Definitivamente este batido tiene muchísimas calorí­as, pero también muchos componentes nutritivos, haciéndola algo más que una bebida deliciosa. Solo recuerda comprar siempre que puedas ingredientes de calidad, no solo las hace más deliciosa, pero también para cuidar de tu salud lo más que sea posible.</span></p>
<p><span style="font-weight: 400;">Cada vez que pueda costear ingredientes orgánicos y locales, procurar hacerlo. Para evitar lo más que se pueda los pesticidas y para apoyar productores locales que están apoyando a florecer nuestras comunidades.</span></p>

<p><span style="font-weight: 400;">Volviendo al batido, y al hecho de que lleva whisky, porque es mi licor de preferencia, y porque este es un batido para adultos que necesitan lo mejor de dos mundos. Este lleva toques crujientes, dulces, salados y amargos por el chocolate oscuro. </span></p>
<p><span style="font-weight: 400;">Los ingredientes principales en este batido los escogí­ para agregar textura y sabor tomando en cuenta el aspecto nutritivo, por ejemplo:</span></p>
<p><b>Mantequilla de Maní: </b><span style="font-weight: 400;">proteí­na, potasio y grasas saludables.</span></p>
<p><b>Banana: </b><span style="font-weight: 400;">ayuda a la digestión, potasio y antioxidantes.</span></p>
<p><b>Leche de Almendras: </b><span style="font-weight: 400;">calcio, hierro, magnesio y fósforo.</span></p>
<p><b>Chocolate Oscuro: </b><span style="font-weight: 400;">magnesio, hierro y manganeso.</span></p>
<p><b>Whisky</b><span style="font-weight: 400;">: es un licor bajo en calorí­as, se dice que ayuda a la digestión, y al no contener carbohidratos es una de las mejores opciones de licor para diabéticos.</span></p>
<p style="text-align: center;"><b>Batido de Mantequilla de Maní­ y Chocolate con Whisky</b></p>
<p><b>Rinde 2 porciones </b><span style="font-weight: 400;">(1 mason Jar como en la fotografí­a)<br />
</span><span style="font-weight: 400;">1 banana congelada, en trozos<br />
</span><span style="font-weight: 400;">4 oz de leche de almendras chocolatada (frí­a)<br />
</span><span style="font-weight: 400;">2 oz de bark thins (chocolate oscuro en barra)<br />
</span><span style="font-weight: 400;">2 cdas de mantequilla de maní­ (fría)<br />
</span><span style="font-weight: 400;">1 cdta de extracto de vainilla<br />
</span><span style="font-weight: 400;">1 pizca de sal<br />
</span><span style="font-weight: 400;">2 cdas de whiskey con miel<br />
</span><span style="font-weight: 400;">1 cda de Frangelico</span></p>
<p><span style="font-weight: 400;">Opcional: chocolate regular para que no sea tan prominente su sabor amargo.</span></p>
<p><b>Direcciones:</b></p>
<p><span style="font-weight: 400;">&#8211; Congelar trozos de banana la noche anterior<br />
</span><span style="font-weight: 400;">&#8211; Asegurarse que la leche chocolatada está sumamente frí­a<br />
</span><span style="font-weight: 400;">&#8211; Con una licuadora o un bullet, licuar todos los ingredientes hasta la consistencia deseada.<br />
</span><span style="font-weight: 400;">&#8211; Ajustar la cantidad de whiskey dependiendo de tu tolerancia al alcohol y si es fin de semana o no ;)</span></p>
<p><span style="font-weight: 400;"><strong>Variantes:</strong><br />
</span><span style="font-weight: 400;">&#8211; Dependiendo de preferencia en azúcar sugiero utilizar chocolate no tan oscuro, o agregar miel.<br />
</span><span style="font-weight: 400;">&#8211; Servir con crema batida para agregar más textura cremosa. Para esta receta no pude conseguir deslactosada ni vegana, por eso le he puesto como opcional.</span></p>
<p>Muchas recetas se pueden alterar al punto de mantener que sean deliciosas, pero reemplazando algunos ingredientes y así­ al romper la dieta, también darle un poco de amor al cuerpo que tenemos, al final del día, solo nos toca uno.</p>

<p><em>Siempre he estado pendiente de las publicaciones de comida de Magdalena ya que su cocina hace ver la comida vegana como una exquisitez. Personalmente puedo decir que aunque mi cocina no sea todo el tiempo vegana, cuando lo es, es igual de deliciosa que comer con derivados de animales, es cuestiÃ³n de tener un mejor entendimiento de ingredientes y claro está, una mejor relación con la comida.</em></p>

<p>Yo era una de esas personas que &#8220;no podí­a ser vegana&#8221; porque me gustaban demasiado los quesos. Era adicta a ellos (literalmente), y estaba demasiado acostumbrada a comer todo con queso, de alguna manera sentía que sin ellos, la comida no tení­a sentido.</p>
<p>Respaldada en esa excusa pasó 10 años siendo vegetariana, de los cuales durante 4 años sentía cierto remordimiento, ya que sabí­a que no era natural comer derivados de la leche de vaca, y además ya sabía en cierta forma que el queso y la leche de vaca también implicaba violencia, sufrimiento, problemas de salud y también daños al ambiente. Y como seguía en mi necedad de seguir queriendo comer quesos, empecé a crearlos a partir de ingredientes vegetales y solo así  logré soltar esta gran atadura y volverme vegana y tener mi conciencia tranquila.</p>
<p>Les invito a que prueben este delicioso sustituto de queso, 100% vegano, facilísimo de hacer, sin ingredientes raros (bueno, la levadura nutricional y el miso son un poco &#8220;raros&#8221;, pero si no tienes, no se los pongas y no pasa nada). Les va a encantar ya está lleno de proteí­nas, así que es perfecto para un desayuno o para rallarlo en una pasta o pizza casera (lo congelas y los rallas estando congelado).</p>
<p>Espero que lo disfruten, ya saben, no hay excusas!</p>

<p style="text-align: center;"><strong>RECETA: Mozzarella de Garbanzos</strong></p>
<p><strong>Ingredientes</strong><br />
&#8211; 1 taza de harina de garbanzos o garbanzos remojados en agua durante 8 horas.<br />
&#8211; 2 tazas de agua.<br />
&#8211; Jugo de 1 limón<br />
-Ajo en polvo al gusto<br />
&#8211; Sal al gusto<br />
&#8211; Media taza de copos de levadura nutricional (opcional)<br />
&#8211; 2 cucharadas de pasta de miso (opcional)</p>
<p><strong>Procedimiento:</strong><br />
Mezcla la harina de garbanzos (o los garbanzos remojados y escurridos) con el agua hasta que quede<br />
una mezcla homogénea. Pasa a una olla y calienta la mezcla removiendo constantemente para que<br />
no se pegue. Cuando llegue a ebullición agrega la levadura nutricional, el jugo de limón y el ajo en<br />
polvo. Sigue removiendo hasta que la mezcla se torne bastante espesa. Apaga el fuego de la estufa y por último agrega la pasta miso, prueba, y si necesita, agrega la sal necesaria.</p>
<p>Pasa la mezcla a un molde de silicón o a cualquier recipiente deseado. Deja enfriar al menos 4 horas<br />
y desmolda cuando está totalmente frío. No te preocupes si cuando lo vayas a desmoldar tiene un agua arriba, solo escurre esa agua y disfrútalo.</p>

<p style="text-align: left;">This is one of my many go-to recipes when I&#8217;m in a rush to make lunch for work. Â Ok, I lied, I don&#8217;t actually have a recipe for this, but mostly a throw-in-together-leftovers-kind of recipe. Â I had some shredded cabbage leftover from a few days coleslaw, so I thought oh man I need to make a salad for both of us and I don&#8217;t have enough cabbage left, but I had corn, apples and other delicious things I could add to make the salad bigger and flavorful.</p>
<p style="text-align: left;">So this is how it went:</p>
<p style="text-align: left;">Serves 2 generous portions:</p>
<p style="text-align: left;"><strong>Ingredients:</strong><br />
1/2 Cup of shredded Cabbage and Carrots (I buy it ready on Whole Foods, it&#8217;s like $4 but it&#8217;s enough for 6-8 servings)<br />
1 Apple (I like crunchy Pink Lady or Gala)<br />
1 whole boiled corn (sliced the kernels), or 1/2 cup of cooked corn kernels<br />
2-3 tbs of sour cherries (I use sour if my apples are sweet) you can also try raisins, dried figs and/or dried cranberries<br />
Chopped Cilantro (I used 3 tbs, I love cilantro)<br />
1 tbs of chopped Scallions (I used 1 tbs because it was from the strong flavor side, the whitest. Â When you use the top of the green onions they&#8217;re not as strong and I&#8217;d use 2 tbs)<br />
1 tps Rice Vinegar (any other vinegar should work, but this is what I had in my pantry)<br />
2 tbs of Veganaise (or whatever dressing you would like to try)<br />
1/2 tbs of Dijon Mustard<br />
Aminos to taste (or coconut aminos or soy sauce or plain salt, whichever you prefer)<br />
Fresh Black Pepper<br />
optional: Toasted nuts to add crunch, I love either pecans or walnuts for this recipe</p>
<p style="text-align: left;"><strong>Directions</strong><br />
Mix everything in a bowl and refrigerate 1-2 hours before eating</p>
<p>That&#8217;s it! That&#8217;s the beauty of these salads. Â They are so quick and easy to make, plus it&#8217;s very easy to make variations with different veggies, nuts, fruits and spices.</p>
<p style="text-align: left;">I prepared the slaw, served in container, with 1/4 of an avocado and some cajun tempeh strips (this should take another 10-15 minutes, but this salad on its own is wonderful.</p>

<p>Tantos recuerdos de hamburguesas durante mi infancia, caseras, de comida rÃ¡pida, luego las gourmet, que si de pavo, vaca, cerdo o gallina. Â Pero hoy le dedico a a las hamburguesas veganas/vegetarianas. Â Hamburguesas que aunque diferente en sabor, igual son deliciosas incluso, mÃ¡s que algunas de animales.</p>
<p>Usualmente prefiero otro tipos de comidas rÃ¡pidas sobre hamburguesas, pero tenÃ­a unas lentejas que me sobraron en la semana y no tenÃ­a Ã¡nimos de hacer sopa, asÃ­ que hamburguesas se hicieron. Â El detalle de las hamburguesas es que me encantan comerlas con papas fritas y batido de chocolate, lastimosamente no siempre se pueden gozar 2000 calorÃ­as en una comida ja!</p>
<p>Es verano en DC asÃ­ que vale la pena hacerse un jugo de tamarindo o chicha de saril (jugo de Jamaica), o zompaÃ±ar la comida con una gaseosa natural. Â En vez de papitas fritas, se puede hacer una ensalada de espinaca, arÃºgula, lechuga y fresas o unos <a title="Kale Chips" href="https://www.cocinerita.com/40-minutes-sunday-brunch-menu/"><strong>Chips de Kale</strong> </a>(son deliciosos!). Â En mi PanamÃ¡ que las fresas son algo caritas, recomiendo una ensalada de mango verde o de tomates.</p>
<p>He probado algunas hamburguesas veganas, mi favorita ha sido la de <a title="Loving Hut Burger" href="http://newyork.seriouseats.com/20110115-loving-hut-burger.jpg"><strong>Loving Hut</strong></a> en Falls Church, VA y la menos favorita es la de <a title="The Burger Joint Veg Burger" href="http://food.lohudblogs.com/files/the-veggie-burger-e1343125855740.jpg" target="_blank">BGR The Burger Joint</a>. Â Es cuestiÃ³n de gustos definitivamente, en lo personal no me gustan las hamburguesas que tienen a saber muy dulce, y la de BGR cae en ese punto dulzÃ±on, supongo que es la melaza que tiene la receta.</p>
<p>Las tapas de los hongos portabella tambiÃ©n hace buena hamburguesa o emparedado, pero yo prefiero apanarles y freirles para que tenga una textura mÃ¡s crujiente. Â Es mÃ¡s he probado un Schnitzel de hongos en el pasado en Lyon Hall que hasta se me hace agua la boca cuando recuerdo ese emparedado. <p>Ajo y Levadura Nutricional son los ingredientes que hicieron que esta hamburguesa de lentejas tuviera excelente sabor. Â Ya probarÃ© la prÃ³xima vez con frijoles negros, trozos de hongo y cilantro, a ver quÃ© tal me sale.</p>
<p>AquÃ­ les dejo la receta y me cuentan cÃ³mo les va:</p>
<p><strong>Ingredientes</strong></p>
<p>8-10 hamburguesas</p>
<p>2 tazas de lentejas cocidas (con ajo, cebolla, hojas de laurel, sal y pimienta) Â (remover el lÃ­quido de las lentejas)<br />
1/4 taza de harina de almendras<br />
1/4 taza de Â levadura nutricional<br />
3/4 taza de hojuelas de avena<br />
2 cucharadas de mantequilla de coco (u otra grasa)<br />
4 dientes de ajo</p>

<strong>Instrucciones:</strong></p>
<p>&#8211; Precalentar el horno a 400ÂºF (200ÂºC)<br />
&#8211; Pasar por la licuadora o procesadora las lentejas con el ajo y vegetales que desee agregar (zanahorias, cebolla, pimentones, etc). Â Licuar hasta que quede todo molido hasta una consistencia de masa o menos si deseas trozos de los vegetales.<br />
&#8211; Mezclar masa con la harina de almendras y la levadura nutricional (sal y pimienta al gusto). Â Agregar la grasa y mezclar hasta que todo quede combinado.<br />
&#8211; Â Calentar la sartÃ©n con una cucharada de aceite de coco, oliva o cualquier aceite vegetal que prefieras.<br />
&#8211; Formar la masa de la lenteja en forma de hamburguesas, yo prefiero que no sean tan gruesas para que sean mÃ¡s fÃ¡ciles de manejar. 2-3 cucharadas de la masa por hamburguesa.<br />
&#8211; Saltear las hamburguesas por ambos lados hasta que queden doradas. Â Poner en el horno por 10-15 minutos (si usan queso es buen momento al final ponerlo encima para que se derrita encima).</p>
<p>Notas:<br />
1. Algunas personas utilizan huevos o semillas de chia para ligar la masa y asÃ­ no se desmorona tan fÃ¡cilmente cuando uno estÃ¡ comiendo la hamburguesa.<br />
2. Â Pueden agregar hierbas como perejil, culantro, cilantro o albahaca para darle toques diferentes de sabor a las hamburguesas (como los falafels).<br />
3. Â Se pueden congelar bien 7-10 dÃ­as.</p>

<p style="text-align: left;"><span style="font-size: 13px;">I love trying new products and though you can make brownies from scratch quickly, I still wanted to try a Gluten-Free version and I saw this package at a Target and got it!, (I think I&#8217;ve seen it too at Whole Foods too), they sell also sell Pancake and Scones mixes I believe. Â </span></p>
<p>I purchased the small bag and followed the directions which only asked for oil and water, I used organic coconut oil, added vanilla extract and chocolate chips.</p>
<p>It took me 2-3 minutes to get everything, mix and and the oven was already hot (I was bakingÂ <a title="Kale Chips w/ Olive Oil" href="https://www.cocinerita.com/40-minutes-sunday-brunch-menu/" target="_blank"><strong>Kale chips</strong> </a>before making the brownies, I just can&#8217;t stop baking kale,something I never thought I would say) The mix baked in 13-14 minutes. Â It was so quick! Â in less than 20 minutes I was already eating brownies ha!</p>
<p>Overall it came out fudgy, soft, I loved the chips I added but they were semisweet so the brownie ended up being too sweet for my taste, I served with a pinch of sea salt on top to balance it out. Â Next time I would definitively add walnuts and bittersweet chocolate chips.</p>

<strong>I&#8217;m so silly I used a ridiculous big baking mold for this little package of Brownie Mix, thanks to this accident I can say this recipe works for ultra-soft cookies or brownies baked in a smaller baking mold.</strong></p>

<p>Sundays gives me sweet and sour feelings, it makes me think a lot about the things I want to do that I didn&#8217;t get to do on Saturdays and at the same time I think to myself &#8216;heck tomorrow is Monday so I want to do nothing today&#8217;. Â Today has felt different and I&#8217;m sure the fact that it isn&#8217;t freezing cold outside has a lot to do with it. Â I played tennis and started the day with a fruity shake so I was hoping to not ruin the &#8216;healthy&#8217; approach, yet I also enjoy my non-so-healthy meals on weekends. Â I know it&#8217;s not good to reward yourself with food, but if you have met me for even a few hours in life, or read my tweets, or even looked at my instagram, by now you should know that I love food, and lots of it.</p>
<p>The other day on Twitter a friend shared her meal, and it had Kale Chips in it, she told me how easy in 9 minutes you can bake them, drizzled with olive oil, salt and pepper. Â I did the same thing, I used purple kale, removed the thick stems and broke the leaves with my fingers, drizzle the oil and 1 teaspoon of lemon juice, salt and fresh pepper and yes, it was that easy!</p>
<p>Before I placed the kale inside of the oven, while pre-heating at 375F, I got my Lemon/Limeade going on, then reserved in the fridge. Â  Sliced my Sweet potatoes in cubes and put inside a deep dish, covered in plastic and cooked in the microwave for 5 minutes. Â Sliced the Onions and used some leftovers cooked mushrooms to add once the onions were sauteed in the pan. Â The Kale inside of the oven now, while my other pan is hot enough to drop my burger patties, cooked them with 1/2 tablespoon of coconut oil. Â Removed onions and mushrooms from the other pan, reserved in a plate and then added more coconut oil into the pan to sautee my now soft sweet potatoes. Removed burgers from the other pan and then toasted my bread with oil left in the pan.</p>
<p>This post isn&#8217;t about sharing a recipe since there was a lot going on and I didn&#8217;t actually take the time to write anything, I took pictures as the dishes were ready to eat, and since the boy was very hungry I only took a few shots!</p>
<p>Though this menu is completely vegan I have to share with all of you that I&#8217;m not a vegan anymore. Â Anyways I wanted to share this with you and if a recipe I post isn&#8217;t 100% vegan I&#8217;ll always try to share suggestions for substitutions. Â I&#8217;m not sure I&#8217;ll be blogging more details on my change of diet, but for now I thank everyone who has supported me through this journey, I wouldn&#8217;t change it for a bit and my life is much better thanks to it.</p>
<p>Now I need to finish some of the fruit leftover and I&#8217;m already planning dinner, because it is a Sunday after all!</p>

<p>I&#8217;m sure I smelled it from someone&#8217;s lunch box and then it wasn&#8217;t too pleasant (I do not like reheated brussels sprouts, it&#8217;s a no no for me!).</p>

<p>Then I moved to US and worked with Chef Andy and it was in the menu, Â these veggies were not part of my station but I got to smell the roasted brussels sprouts the other cooks would work on daily and then before servingÂ sauteÂ in butter, they were delicious and it totally changed my perspective of these vegetables. Â Another time I went to my favorite Pizza place <a title="Pupatella Pizzeria" href="http://www.pupatella.com/_/home/home.html" target="_blank"><strong>*Pupatella*</strong></a> and I found this appetizer, Fried Brussels Sprouts with Balsamic Vinegar and Green Apples, I thought it was too strange, but then I ordered it, and from that day on I have kept ordering it every time I go there.</p>
<p>I wanted to have my own version of brussel sprouts, I remembered what I like the most of each dish I&#8217;ve tried,Â crispiness,Â saltiness, etc.</p>
<p>Also I was sent a bottle of Sacha Vida Oil and I wanted to try it in a dressing, but it is too cold, and I am not craving any cold salads so I decided to try this oil to roast the sprouts and the flavor worked pretty well, light nuttiness, mild flavor that didn&#8217;tÂ overpower the sprouts.</p>

<p>So here we go:</p>
<p><strong>Serves 4</strong><br />
<strong>Ingredients:</strong><br />
&#8211; Â 1 lb Brussels Sprouts<br />
&#8211; Â 1 Green Apple<br />
&#8211; Â 1.5 tbs of Sacha Inchi Oil<br />
&#8211; Â 1/4 cup dried cranberries<br />
&#8211; Â 1/4 cup roasted walnuts<br />
&#8211; Â 4 tbs of balsamic vinegar reduced to half (if your vinegar is too liquidity, if it&#8217;s thick enough just use 2 tbs of the vinegar)<br />
&#8211; Â Salt &amp; Pepper</p>

<p><strong>Directions:Â </strong><br />
&#8211; Â Preheat oven to 375F<br />
&#8211; Â Slice your apples in cubes, or julienne, as you prefer.<br />
&#8211; Â Peel the outer skin of the brussels sprouts. Â Trim the end and cut them in half.<br />
&#8211; Â Toss them in a mixing bowl with the oil, salt and pepper.<br />
&#8211; Â Place the sprouts on a baking sheet for 10-15 minutes, turn them and bake for another 10 minutes (I like mine really roasted so the last 10 minutes I&#8217;ll increase the heat to 400F, but don&#8217;t let them burn!)<br />
&#8211; Â Once they are ready place back in mixing bowl with the vinegar, walnuts, apple and cranberries, toss and serveÂ immediately!</p>
<p>I love my salad warm and I usually have it as a started or as a side dish!</p>

<strong>Curry-Kale Tofu Scramble served w/ Avocado</strong></p>
<p>Â I&#8217;ve heard so much about these Tofu Scrambles. Â I visited <a title="Great Sage, vegan restaurant" href="http://greatsage.com/" target="_blank"><strong>Great Sage Restaurant</strong> </a>a few months ago and tried their Tofu Quiche, it was phenomenal and from that moment I thought of which recipes I would like to try.</p>
<p>Some mornings I wake up hoping to make the scramble and then I remember the tofu needs pressing for at least 4 hours, so that day I said whatever and pressed it for 30 minutes, worst case scenario my tofu would be a bit watery so not a big deal. Â I&#8217;m not a tofu expert but I can tell me and the husband loved the results, with only 30 minutes pressed tofu, it took me another 15-20 mins to have it ready.</p>
<p>I don&#8217;t even follow baking recipes verbatim so on this caseÂ every timeÂ I make the dish the recipe will vary as well, so feel free to add/remove/change these ingredients as you see convenient.</p>

</a><strong>Pressed Tofu (Extra Firm)</strong></p>
<p><em>He escuchado muchÃ­simo acerca de los Revueltos de Tofu. Â VisitÃ© un restaurante llamado <a title="Restaurante vegano *Great Sage*" href="http://greatsage.com/" target="_blank">Great Sage</a> hace unos meses y deleitÃ© un Quiche de TofÃº, fue espectacular y desde ese momento empecÃ© a pensar en las distintas recetas que me gustarÃ­a probar.</em></p>
<p><em>Algunas maÃ±anas despierto con la esperanza de hacer el revuelto y luego recuerdo que el Tofu necesita ser presionado por lo menos 4 horas, asÃ­ que uno de estos dÃ­as me dije a mi misma que lo presionarÃ­a por 30 minutos, lo peor que podrÃ­a pasar es que estarÃ­a con mÃ¡s agua de lo normal. Â No soy una experta en Tofu pero puedo asegurarles que nosotros disfrutamos de los resultados, con solo presionando el Tofu por 30 minutos, me tomÃ³ otros 15-20 minutos para tener este plato listo.</em></p>
<p><em>Yo ni sigo literalmente las recetas para hornear asi que cada vez que hago este plato mi receta varÃ­a, recomiendo probar con algunos cambios agregando o removiendo algunos ingredientes como te sea conveniente.Â </em></p>

<strong>Sauteing Kale withÂ </strong><strong>garlic</strong></p>
<p><strong>Ingredients: (Serves 3-4 for sandwiches, 2 if served as main dish w/ avocado)</strong></p>
<p>Half Block of *pressed tofu*<br />
1 tbs of oil (earth balance butter, coconut, etc)<br />
3/4 cup of chopped kale<br />
2 minced cloves of garlic<br />
2 tbs chopped scallions<br />
1-2 tbs of Curry Paste<br />
1/2 tbs of Turmeric<br />
Braggs Liquid Aminos<br />
Cumin &amp; cayenne pepper to your taste<br />
(I had leftover Daiya Cheddar and 1 tbs of Raw Vegan Parmesan Cheese)</p>
<p><strong>Directions:<br />
</strong>It&#8217;s recommended to press the tofu for 4 hours at least, I did it for 30 mins and I was happy with the results.</p>
<p>Heat up a pan with the oil,Â sauteÂ the garlic with the chopped kale and when the garlic is browning start crumbling the pressed tofu with your fingers and stir.<br />
Add the curry paste and the rest of the spices, add Braggs Liquid aminos and stir.<br />
Cook for 1-2 minutes until the consistency you prefer and before turning it off add the (optional cheese) and the scallions.</p>
<p>I served this dish with avocado slices. but my husband had the scramble in a sandwich and also loved it.<br />

<strong>Crumbled Tofu with the sauteed veg</strong></em></strong></p>
<p><strong><em><strong></strong>Ingredientes:</em></strong></p>
<p><em>Medio bloque de Tofu (ya presionado)</em><br />
<em>1 cucharada de aceite (manetquilla vegana, aceite de coco, la de preferencia)</em><br />
<em>3/4 taza de Col Rizada picada en tiras</em><br />
<em>2 dientes de Ajo picaditos</em><br />
<em>2 cucharadas de Cebollina picadaÂ </em><br />
<em>1-2 cucharadas de Pasta de Curry</em><br />
<em>1 /2 cucharada de TurmÃ©rico</em><br />
<em>Braggs Liquid Aminos (salsa de soya, cuidado con el punto de sal de la que escoja)</em><br />
<em>Comino y Pimienta Cayenne al gusto</em><br />
<em>(Yo usÃ© unas sobras de queso Daiya Cheddar y media cucharada de Queso Vegano Parmesano Crudo).Â </em></p>
<p><strong>Instrucciones:</strong></p>
<p><strong></strong><em>Lo ideal es presionar el Tofu suavemente por lo menos 4 horas para quitar el exceso de lÃ­quido, pero yo lo hice por 30 minutos no muy suave que digamos y estuve feliz con los resultados. Â </em></p>
<p><em>Calentar el sartÃ©n con aceite, saltear el ajo con la col rizada y cuando el ajo se estÃ¡ dorando empieza a desmenuzar el tofu con los dedos y revolver la sartÃ©n. Â </em><br />
<em>Agregue la pasta de curry con el resto de las especias, agregar tambien el Braggs Liquid o salsa de soya a su gusto.Â </em><br />
<em>Cocinar por 1-2 minutos hasta que obtenga la consistencia que busca y antes de apagar estufa agregar la cebollina picadita y el queso (opcional).Â </em></p>
<p><em>El revuelto de Tofu lo servÃ­ con rebanadas de aguacate, pero mi esposo lo hizo en emparedado (sandwich) y tambiÃ©n le encantÃ³.<br />

<p>A party with the <a href="http://operationeatery.com/"><strong>operation:eatery</strong></a> family is a party you never want to end. Â It could be months since you&#8217;ve seen everyone from the o:e team and yet when everyone gathers is as if you saw them just the night before.</p>
<p>Nothing beats Rebecca hosting an event, her multitasking skills, asking to every guest if they need/want anything and yet continuing to work on her cooking plans, with the lovely Lucinda running around and giving a hug and kiss to her mama once in a while, Rebecca smiles and keeps the party going, gracefully.</p>
<p>It was great to see everyone sharing their favorite dishes and drinks a few of which were vegan! Â I had a slice of Broccoli-Tofu Quiche, a side of spicy chili and one of my favorite desserts *Rice Pudding*.</p>
<p>I can&#8217;t wait for next year&#8217;s extravaganza, hopefully I&#8217;ll bring a few more Panamanian Traditional Vegan dishes!</p>

Â I did some research and though I&#8217;m not a big fan of faux meats I have a found a few ones I like to indulge once in a while so I thought the <a title="Tofurky Roast" href="http://www.tofurky.com/tofurkyproducts/holiday_products.html" target="_blank"><strong>*Tofurky Roast*</strong></a> seemed like a good dish to add to the menu. On Thanksgiving Day I thawed it, sauteed it, basted, etc. Â I followed all of the instructions, added extra kick/spice touches and yet I didn&#8217;t enjoy it a bit. Â It wasn&#8217;t horrible, it had a strange flavor even after I sliced it and sauteed with garlic and olive oil. Â Since I didn&#8217;t like it much, I decided to do something else with it so it wouldn&#8217;t go to waste. Â I chopped it into mini cubes to mix with a fried rice and with half of my stuffing. Â The flavor was so strong I didn&#8217;t enjoy the fried rice or the stuffing at all. <a href="https://www.cocinerita.com/wp-content/uploads/2012/12/Tofurky-Roast-Cocinerita-1.jpg"><img loading="lazy" decoding="async" class=" wp-image-1770 alignright" title="Tofurky Roast Cocinerita 1" src="https://www.cocinerita.com/wp-content/uploads/2012/12/Tofurky-Roast-Cocinerita-1-300x231.jpg" alt="" width="300" height="231" srcset="https://www.cocinerita.com/wp-content/uploads/2012/12/Tofurky-Roast-Cocinerita-1-300x231.jpg 300w, https://www.cocinerita.com/wp-content/uploads/2012/12/Tofurky-Roast-Cocinerita-1-116x90.jpg 116w, https://www.cocinerita.com/wp-content/uploads/2012/12/Tofurky-Roast-Cocinerita-1.jpg 648w" sizes="(max-width: 300px) 100vw, 300px" /></a> Some folks say may say I over cooked, etc.. but I followed the instructions verbatim, and heck I have given good flavor to very bland faux meats in the past, but this I didn&#8217;t manage to doctor and for $8.00 it&#8217;s not worth the hassle. I have to add though that I&#8217;ve tried 2 sliced faux cured meats from Tofurky and they made tasty sandwiches, so either I don&#8217;t know how to work with a Tokurfy Roast, or that&#8217;s just how it&#8217;s supposed to taste and it&#8217;s simply not my thing.
