Today everyone talks about how summer isnâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />t over yet, but they are demanding all-the-things pumpkin flavored and there are already scarves everywhere you go (I ALWAYS wear scarves, love them). Whether it is hot or cold, it doesnâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />t make much of a difference to me since I grew up in a very hot and humid country. 100F? Thatâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />s nothing, my mom would make soup for lunch and we would eat our lunch while we sweated, oh yes we sweated so much, we didnâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />t have any A/C until recently.</p>
<p>At this point I shouldnâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />t mention, again, how much I love corn, but it doesnâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />t get old so Iâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />ll go on about it. I love corn, fresh, old, popped, crispy, soft, sweet, spicy and/or salty, and this recipe sort of wraps it up. A cupcake, the baked good who used to be the popular girl/guy and has now become the person that everybody hates, but folks still hang around him/her, because they like it.</p>
<p>I was thinking of making whoopie pies, but then I saw these cupcake liners at World Market and said, owls remind me of fall but the colors are perfect for summer, so a cupcake recipe it is. Itâ€<img src="https://s.w.org/images/core/emoji/15.0.3/72x72/2122.png" alt="™" class="wp-smiley" style="height: 1em; max-height: 1em;" />s worthy to mention that these cupcakes are not super fluffy and light.</p>

<p>Here&#8217;s the recipe for the Corn Cupcakes:<br />
Makes 12 cupcakes</p>
<p><strong>Ingredients:</strong><br />
3/4 cup of AP flour<br />
1/4 cup of Almond flour<br />
1 cup of Cornmeal<br />
3 large eggs, at room temperature (whites and yolks separated)<br />
1 cup of unsweetened Almond milk<br />
3 tbs of butter, at room temperature<br />
1 tbs Baking powder<br />
1/2 tsp salt<br />
1 tsp Vanilla extract<br />
1/2 cup of fresh Corn kernels, cooked<br />
1/4 cup of Brown sugar<br />
2 tbs of Honey<br />
Caramel Popcorn (decoration)</p>
<p><strong>Instructions:<br />
</strong>1. Â Pre-heat the oven at 375F<br />
2. Â Combine and sift the dry ingredients twice.<br />
2. Â In a separate bowl, beat the sugar, honey and the butter, once combined, add the egg yolks, one by one, then add the vanilla extract.<br />
3. Â In another bowl beat the egg whites until soft peaks develop (more information on how to properly whip your egg whites <a title="Eggs" href="http://www.joyofbaking.com/eggs.html" target="_blank"><strong>click here)</strong></a><br />
4. Â Add the corn to your dry ingredients and combine with a spatula, then in three parts add to the flour bowl, the egg whites and the sugar mixture.<br />
5. Â Fill the cupcake liners 3/4 of the way (this batter doesn&#8217;t grow a lot).<br />
6. Bake 15-20 minutes. After the first 18 minutes insert aÂ toothpick in the center of the cupcake and it should come out either clean or with only a few crumbs clinging to it.<br />
7. Â Let it cool off before adding the frosting on top.<br />
8. Â  Top the frosting with caramel Popcorn for decoration (optional).</p>

<p><strong>Salted Caramel Frosting</strong><br />
Ingredients:<br />
1/2 cup of butter, at room temperature<br />
1 cup of Confectioner&#8217;s Sugar<br />
1/2 cup of Salted CaramelÂ <a title="Salted Caramel Syrup (Raspadura)" href="https://www.cocinerita.com/raspadura-popcorn/" target="_blank">(recipe here)</a>Â or you could purchase some of your favorite brand<br />
1/2 tsp of vanilla extract<br />
1 pinch of Salt</p>
<p><strong>Instructions</strong><br />
1. Â In a bowl, beat together butter, sugar, caramel, vanilla, and salt until light and fluffy.<br />
2. Â If your frosting is too soft, place in the the fridge for 30-45 minutes until it&#8217;s more manageable to use it.</p>
<p><strong>NOTES:</strong><br />
&#8211; Â I don&#8217;t have piping bags since I barely do any baking decoration so instead I used a sandwich size ziploc bag and added half of the frosting to it, with a pair of scissors cut off a small hole from of the the bag corners.<br />
&#8211; Â If you don&#8217;t feel comfortable piping frosting, I suggest either using a spatula or using the ribbons method like on the picture below.<br />
&#8211; Â If you won&#8217;t use almond flour and only whole purpose, I suggest adding a tablespoon of butter to your recipe.<br />
&#8211; Â If you have a sweet tooth, you might want to increase the amount of sugar 1-2 extra tablespoons.</p>

<p>Se siente extraÃ±o decirle adiÃ³s al verano teniendo todavÃ­a un clima arriba de los 30C grados, pero enfrentÃ©moslo, el clima en DC puede cambiar de la noche a la maÃ±ana. Â Las personas hablan de como el verano no se ha terminado, pero todos buscan comidas y accesorios con calabazas. Â TambiÃ©n se encuentran bufandas por todos lados (yo siempre uso bufandas, las adoro). Â Ya sea que estÃ© frÃ­o o caliente, no hace mucha diference para mÃ­ ya que crecÃ­ en un paÃ­s hÃºmedo y caliente. Â 40C grados? eso no es nada, mi mamÃ¡ igual servirÃ­a sopa caliente para almuerzo y todos la tomarÃ­amos sudando, oh si sudÃ¡bamos bastante, no tenÃ­amos aire acondicionado hasta recientemente.</p>
<p>Ya he dicho miles de veces cuanto amo el maÃ­z, pero no me canso de repetirlo asÃ­ que aquÃ­ les va. Â Yo adoro el maÃ­z, frezco, explotado, tostado, suave, dulce, picante y/o salado, y esta receta en cierta forma envuelve todos esos estilos. Â El cupcake, el postre que solÃ­a ser la chica/o popular en el cole y ahora se ha transformado en esa persona que todo el mundo odia, pero igual pasan rato con Ã©l/ella, porque les gusta.</p>
<p>Yo estaba originalmente pensando en hacer whoopie pies, pero vi unos moldes de cupcakes con unos bÃºhos divinos en World Market, y aunque los bÃºhos son sÃ­mbolo de otoÃ±o, los colores son perfectos para el verano, asÃ­ que escogÃ­ hacer cupcakes. Â Cabe resaltar que estos cupcakes no son sÃºper esponjosos y ligeros.</p>

<p>AquÃ­ les va la receta:<br />
Hace 12 cupcakes</p>
<p><strong>Ingredientes:</strong><br />
3/4 taza de Harina de todo propÃ³sito<br />
1/4 taza de Harina de Almendras<br />
1 taza de Harina de MaÃ­z<br />
3 huevos grandes, a temperatura ambientes y con yemas separadas<br />
1 taza de leche de Almendras sin azÃºcar<br />
3 cdas de Mantequilla, a temperatura ambiente<br />
1 cda de Polvo de Horneas<br />
1/2 cdta de Extracto de Vainilla<br />
1/2 taza de granos de MaÃ­z frescos y cocidos<br />
1/4 taza de AzÃºcar morena<br />
2 cdas de Miel<br />
Palomitas Caramelizadas (decoraciÃ³n)</p>
<p><strong>Instrucciones:</strong><br />
1. Â Pre-caliente el horno a 190C<br />
2. Â Combine y cierna la harina con el resto de los ingredientes secos 2 veces.<br />
3. Â En un bol separado, bata el azÃºcar con la miel, y la mantequilla. Una vez combinados, agregue la yemas una a una y luego la vainilla.<br />
4. Â En otro bol bata las claras a punto de nieve (para mÃ¡s informaciÃ³n de este mÃ©todo, <a title="Batir claras de huevo a nieve" href="http://reposteriapasoapaso.com/tecnicas/claras_punto_nieve.html" target="_blank"><strong>presione aquÃ­)</strong></a>.<br />
5. Â Agregue los granos de maÃ­z a los ingredientes secos y combine con una espÃ¡tula, luego en tres partes agregue a este mismo bol, la mezcla de la clara de huevos y la mezcla de la azÃºcar.<br />
6. Â Llene con la mezcla final los moldes de cupcakes.<br />
7. Â Hornee por 15 a 20 minutos. Â Luego de los 18 minutos inserte un palillo en el medio del cupcake y deberÃ­a salir limpio o con migajas colgando del mismo.<br />
8. Â Una vez horneados, deje que los cupcakes se enfrÃ­en antes de decorar con el glaseado.<br />
9. Â Para decoraciÃ³n puede poner palomita caramelizadas encima del glaseado.</p>

<p><strong>Glaseado de Caramelo<br />
</strong>Ingredientes:<strong><br />
</strong>1/2 taza de mantequilla a temperatura ambiente<br />
1 taza de azÃºcar en polvo (glas)<br />
1/2 taza de Caramelo SaladoÂ <strong><a title="Salted Caramel Syrup (Raspadura)" href="https://www.cocinerita.com/raspadura-popcorn/" target="_blank">(receta aquÃ­)</a>Â </strong>o puedes comprar caramelo de tu marca favorita<br />
1/2 cucharadita de extracto de vainilla<br />
Pizca de sal</p>
<p><strong>Instrucciones:</strong><br />
1. Â En un bol, bata la mantequilla, azÃºcar, caramelo, vainilla, y sal hasta que quede ligero y esponjoso.<br />
2. Â Si su glaseado queda demasiado suave, colÃ³quelo en el refrigerador por 30-45 minutos hasta que quede de una forma mÃ¡s manejable</p>
<p><strong>NOTAS:</strong><br />
&#8211; Â Si usted no posse una manga pastelera (yo ni tengo porque es raro que decore mis pasteles), utilice una bolsa plÃ¡stica como las de la marca ziploc de tamaÃ±o mediano. Â Corte con tijeritas una esquinita de la bolsa para empujar el glaseado.<br />
&#8211; Â Si no se siente cÃ³modo/a glaseando los cupcakes, yo sugiero utilizar una espÃ¡tula o glasear haciendo lazos de un lado hacia el otro como muestran las imÃ¡genes.<br />
&#8211; Â Si no utilizarÃ¡ harina de almendras y solo la de todo propÃ³sito, sugiero agregar una cucharada de mantequilla a la receta.<br />
&#8211; Â Si le gusta los postres muy dulces, puede que necesite aumentar la cantidad de azÃºcar en esta receta.</p>
