<p>I published this podcast episode back at the end of April and I could tell you so many of the excuses I have for not having shared the recipe until now, but instead I&#8217;ll just keep it short and sweet and share the recipe.</p>

<div><strong>Chicken Stock Recipe </strong><em>(this will yield enough to make arroz con pollo (twice the recipe), or just save the chicken stock and shredded chicken for another time)</em></div>

<div>3.5 lb chicken thigh (bone &amp; skin in)</div>
<div>3 medium size carrots</div>
<div>1 medium size yellow onions</div>
<div>scallion bulbs</div>
<div>3 garlic cloves</div>
<div>cilantro stalks</div>
<div>1 bay leaf</div>
<div>culantro leaves (2-3)</div>

<div><strong>Instructions:</strong></div>
<div>&#8211; Fill up a pot with water until you cover all the chicken, add chopped vegetables, herbs stalks. and bay leaf</div>
<div>&#8211; Bring to a boil and then lower the temperature and simmer 30-45 minutes (until the chicken is cooked).</div>
<div>&#8211; Remove all the chicken from the pot, continue simmering the stock.</div>
<div>&#8211; Debone chicken and remove skin and toss (bones &amp; skin) back inside the pot, you can simmer in low for 2-3 hours, depending on how much time available you have and how much you want to reduce as well you can either add more water to the stock, or you can make sure you get 2-4 cups and your stock will have a wonderful strong chicken delicious taste.</div>
<div>&#8211; While the stock continues to simmer you can now shred the chicken with your hands and reserve.</div>
<div>&#8211; Pass stock through a sieve to make sure it has no bits, squeeze those juice from the bones, skin, and vegetables (seriously, look at the photo above on how much I squeezed them skin/bones/veg).</div>

<div><strong>Note:</strong> When the stock cools off you can skim the fat off from the top and save it to use to cook the arroz con pollo or any other delicious meal; chicken fat is so delicious I actually use it a lot for cooking over other animal fats.</div>

<div>1 lb of white rice</div>
<div>2 cups of shredded chicken</div>
<div>2-3 cups of chicken stock</div>
<div>1 tbs tomato paste</div>
<div>3 garlic cloves, minced</div>
<div>Scallions, chopped</div>
<div>Cilantro, chopped</div>
<div>Culantro, chopped</div>
<div>Chicken Fat</div>
<div>Annatto powder</div>
<div>Turmeric Powder</div>
<div>Paprika</div>
<div>Garlic Powder</div>
<div>Onion Powder</div>
<div>Cumin</div>
<div>Worcestershire Sauce</div>
<div>Soy Sauce</div>
<div>Black Pepper</div>
<div>Red Pepper, chopped</div>
<div>Green Peas</div>
<div>Carrot, chopped</div>
<div>Onion, chopped</div>
<div>Olives</div>
<div>Capers</div>

<div><strong>Instructions:</strong></div>
<div>&#8211; Rinse your rice in cold water 3-4 times to remove some starch.</div>
<div>&#8211; Bring 2 cups of stock to a boil, add tomato paste, pinch of turmeric, 1-2 teaspoons of the annatto, pinch of all the spices, and salt. Taste and adjust as you go, it is easier to add more seasoning later.</div>
<div>&#8211; Add the rice, make sure there is around 3/4-1 inch of the stock above the rice, cover the pot, temperature on medium.</div>
<div>&#8211; Add the garlic, cilantro, culantro, red pepper, and add around 2-3 tbs of chicken fat.</div>
<div>&#8211; Cover and simmer until the rice is done, if you think it&#8217;s too watery and are afraid of it getting too porridge like don&#8217;t add more stock and finishing i without a lid.</div>
<div>&#8211; In a separate pan, caramelize your onion in chicken fat, medium high heat, reserve, then heat up pan again with chicken fat and caramelize the carrots a little as well.</div>
<div>&#8211; Reheat pan with chicken fat if you still have some or olive oil and saute the shredded chicken in chicken fat with annatto and turmeric. This can be done in two minutes since your chicken is already cooked.</div>
<div>&#8211; Add back the cooked carrots and onions. Turn off your pan.</div>
<div>&#8211; Lastly, add the peas to your shredded chicken mixture, if you get frozen peas: rinse them under room temperature water and then mix in with the carrots, add the onions back and once your rice is done you can mix it all together. (make sure you are seasoning as you go, with salt, soy sauce, and/or worcestershire sauce.</div>

<div><strong>FINISHING THE ARROZ CON POLLO</strong></div>
<div>&#8211; I like to finish my arroz con pollo in the oven, I mix everything in this stage (olives/capers, shredded chicken, and rice with vegetables) and spread it all on an oiled (covered in foil if you prefer) baking sheet, at 350F-400F until your preferred doneness. You might have to stir a few times to make sure the whole rice is cooked as you like it.</div>

<div><strong>NOTE 1:</strong> I&#8217;ll keep coming back to this recipe and make it as clear as possible, but this is really how I usually make my arroz con pollo. I have what I call a &#8220;lazy version&#8221; where I use Maggi cubes (literally has turmeric/annatto/msg and a bunch of delicious stuff that saves time). You can cook all together as many people do.</div>
<div><strong>NOTE 2:</strong> I&#8217;m careful with the salt because I add a lot of olives and capers to my arroz con pollo at the end so they retain their crunch and saltiness, this is why I make my last adjustment right when I place the baking sheet with the arroz con pollo in the oven.</div>
<div><strong>Optional for serving:</strong><br />
&#8211; Sliced toasted almonds</div>
<div>&#8211; Raisin haters, some people might actually add raisins, but it is not common, I do love raisins in my arroz con pollo!</div>
<div>&#8211; For a more Panamanian traditional party way: serve your arroz con pollo with a side fried yellow plantains (tajadas or caramelized plantains) also with a Russian Potato Salad. Trust me, listen to the podcast on the reason why, haha!</div>

<p>A pesar de que los muffins son uno de los postres más básicos para hornear, tienen un encanto y pienso que toda persona que tenga aunque sea una mÃ­nima curiosidad de crear algo delicioso en su cocina, debe probar hornear muffins.</p>
<p>Hace ya casi 10 años compré este libro que me inspiró sobretodo por las ilustraciones, <a href="https://www.amazon.com/Mad-About-Muffins-Cookbook-Muffin/dp/0836269942/">Mad About Muffins </a> y aunque algunas recetas no me gustaron del todo fue buena motivación para hornear muffins en casa.  Puedo comprender que todo sea un poco abrumador al buscar recetas y no saber por cuál empezar y lo principal que recomiendo es que empiecen probando muffins de panaderías, vean videos de personas haciendo muffins y ya luego cuando sepan algúnn sabor que les fascine de allá­ buscan alguna receta que quieran probar.</p>
<p>Igual en este episodio les digo más de cómo queda haciendo muffins, mucho cuento y una receta que les agrego también agua, y bueno el que no quiere hornear igual acompáñame escuchando el episodio con un café y riéndote de mis locuras.</p>

</span><span class="s1">1 1/2 taza de harina de todo propósito<br />
</span><span class="s1">3 1/2 cucharadita de polvo para hornear<br />
</span><span class="s1">1/2 cucharadita de sal<br />
</span><span class="s1">4 huevos a temperatura ambiente<br />
</span><span class="s1">1/3 taza de azúcar<br />
</span><span class="s1">1 taza de fresas picadas<br />
</span><span class="s1">1/2 taza de chispas de chocolate<br />
</span><span class="s1">cáscara de limón rallado 1 cucharada<br />
</span><span class="s1">1 cucharadita de extracto de limón<br />
</span><span class="s1">1 cucharadita de extracto de fresas (o de algún licor que vaya rico como Grand Marnier, o más extracto de limón)</span></p>

<p class="p3">INSTRUCCIONES</p>
<ol>
<li class="p1"><span class="s1">350F grados precalentar el horno</span></li>
<li class="p1"><span class="s1">Molde de Muffins para 12, liners para que no se peguen los muffins al molde y nonstick spray.</span></li>
<li class="p1"><span class="s1">Cernir los ingredientes secos (harina, sal, polvo para hornear en un bol y tener listo)</span></li>
<li class="p1"><span class="s1">En un bol separado batir mantequilla, cáscara de limón o de naranja y azúcar hasta que queden bien mezclado, ya sea con una batidora de mano o una manual o con el Kitchenaid si tienen uno.</span></li>
<li class="p1"><span class="s1">Batir los huevos uno a uno hasta que queden mezclados y el aceite.</span></li>
<li class="p1"><span class="s1">Una vez mezclado todo agregar los extractos y las fresas picaditas.</span></li>
<li class="p1"><span class="s1">Agregar en 3 vueltas los ingredientes secos mezclados al bol con una cuchara o espátula agregar las chispas de chocolate (o nueces si prefieres) y mezclar hasta que todo quede mezclado.</span></li>
<li class="p1"><span class="s1">Porcionar la masa en el molde, asegurarte que sea lo más balanceado posible.</span></li>
<li class="p1"><span class="s1">Hornear 15-18 minutos y luego voltear.</span></li>
<li class="p1"><span class="s1">Hornear 8-12 minutos, después de los 8 minutos revisar cada 2 minutos para asegurarse no sobre-cocinar los muffins, pero que te queden bien horneaditos.</span></li>

<p>1. Tener todos los ingredientes medidos o pesado (si no usan pesa en google solo asegúrense de convertir correctamente, no pesa lo mismo una taza de agua que de harina por ejemplo).</p>

<p>3. Agregar el agua, si quieren hagan la mitad y luego poco a poco hasta que sientan la masa y el gluten desarrollándose.</p>

<p>4. Mi masa se sentía un poco seca puede ser por el clima así­ que agregué 2 cucharadas más de agua al final, es bueno sentir la masa y entre más hagan hojaldres más desarrollarán su receta en base a su preferencia.</p>

<p>5. Antes de agregar más agua, agregue la mantequilla a temperatura ambiente en pedacitos y ya sea incorporar con la batidora de pie o con mano (también he hecho esta receta a mano y funciona igual solo que me toca amasarla más tiempo). Batir a velocidad media hasta que la mantequilla se incorpore por completo.</p>

<p>6. Te darás de cuenta qué tanto gluten la masa ha desarrollado y si está lista si pasa el windowpane test que es la prueba que te muestra si la masa está lista, la mía estaba casi lista en esta foto, para mi masa de hojaldre así­ está bien, fueron casi 5-7 minutos en la batidora, así­ que luego de batir 3-5 minutos prueben la masa cada 2 minutos extras hasta que se sienta un poco elástica y se pueda estirar sin reventarse.</p>

<p>7. Si tienes un envase grande guárdalo allá­ tapadito a temperatura ambiente por lo menos 2-3 horas. Prueba si es tu primera vez y tu casa es muy caliente capaz en 30 minutos está listo así­ que sin temor calienta tu aceite y prueba friendo pedacitos del mismo grueso que estirarás tu hojaldre para medir bien la temperatura del aceite.</p>

<p>8. A medida que los frían colocar en papel toalla para que se drene el aceite de las hojaldres y lo ideal es ir pasando las hojaldres de una vez para que no se enfríen jaja!</p>

<p>La masa que te sobre al día siguiente se puede frei­r y a mí­ me encantan con huevo fritos y queso, o si preferís postre agregarle azúcar pulverizada, chocolate y canela. Con miel también queda muy deli la verdad.</p>

<p><span style="font-weight: 400;">Con la llegada de las lluvias, los dÃ­as grises y calores intensos fue muy fácil que se me antojara hacer un batido refrescante. Usualmente me preparo batidos de vegetales y frutas durante la semana, bajos en calorías, para snack o para reemplazar una comida. Pero, algunas veces quiero un helado o un batido, o un trago, así­ que ¿porqué no tenerlo todo en un mason jar? </span></p>
<p><span style="font-weight: 400;">Es muy fácil crear cosas deliciosas que no sean nutritivas y llenas de componentes dañinos para nuestra salud. Sin embargo, también podemos preparar recetas que sean deliciosas y que al mismo tiempo aporten algún aspecto nutritivo a nuestras dietas. </span></p>
<p><span style="font-weight: 400;">Definitivamente este batido tiene muchísimas calorí­as, pero también muchos componentes nutritivos, haciéndola algo más que una bebida deliciosa. Solo recuerda comprar siempre que puedas ingredientes de calidad, no solo las hace más deliciosa, pero también para cuidar de tu salud lo más que sea posible.</span></p>
<p><span style="font-weight: 400;">Cada vez que pueda costear ingredientes orgánicos y locales, procurar hacerlo. Para evitar lo más que se pueda los pesticidas y para apoyar productores locales que están apoyando a florecer nuestras comunidades.</span></p>

<p><span style="font-weight: 400;">Volviendo al batido, y al hecho de que lleva whisky, porque es mi licor de preferencia, y porque este es un batido para adultos que necesitan lo mejor de dos mundos. Este lleva toques crujientes, dulces, salados y amargos por el chocolate oscuro. </span></p>
<p><span style="font-weight: 400;">Los ingredientes principales en este batido los escogí­ para agregar textura y sabor tomando en cuenta el aspecto nutritivo, por ejemplo:</span></p>
<p><b>Mantequilla de Maní: </b><span style="font-weight: 400;">proteí­na, potasio y grasas saludables.</span></p>
<p><b>Banana: </b><span style="font-weight: 400;">ayuda a la digestión, potasio y antioxidantes.</span></p>
<p><b>Leche de Almendras: </b><span style="font-weight: 400;">calcio, hierro, magnesio y fósforo.</span></p>
<p><b>Chocolate Oscuro: </b><span style="font-weight: 400;">magnesio, hierro y manganeso.</span></p>
<p><b>Whisky</b><span style="font-weight: 400;">: es un licor bajo en calorí­as, se dice que ayuda a la digestión, y al no contener carbohidratos es una de las mejores opciones de licor para diabéticos.</span></p>

<p>Bread is my favourite guilty pleasure, I just lied, I don&#8217;t feel guilty after eating bread. Just how much do I love bread? All types, organic, local, factory, with preservatives, without, with fake oils and without. Seriously, as long as it&#8217;s fresh enough, I&#8217;ll most likely love any piece of bread. Toasting it or using it for bread pudding!</p>

<p>As shown on this image, I toasted bread (egg and whole wheat) using two different methods. Using a regular toaster (which was convenient and quick), the other was toasting it on a pan with butter (which was more delicious and my preferred method to toast bread), I mean, come on, it&#8217;s butter ;)</p>
<p>If you&#8217;re not familiar with the trend of toast, just picture it as an open sandwich. I&#8217;m not sure how the rules to eat it go, with fork and knife, or grabbing it. I&#8217;m not crazy about following rules when it comes to eating, so I do as the toast tells me to, if it&#8217;s heavy and might crumble down, a fork it is!</p>

<p>Another reason to love toasts over sandwiches is that you get more filling (toppings) over bread, which is usually one of my complains when ordering sandwiches, the lack of cheese, meat, or vegetables. Also, if you are having a cheesy toast, perhaps you can ask for it broiled, just like pizza. (I&#8217;m so hungry right now&#8230;)</p>

<p>I chose these toasts keeping in mind who I was making them for, my family. These toasts take you through different layers of flavours, textures, and temperatures. You wouldn&#8217;t be making a foie gras Toast for picky eaters. Of course I wanted to use avocado for my toasts, it&#8217;s probably after eggs, the most popular topping, but my avocados were not ready, which pushed me to be creative and find solutions with other ingredients, sour cream for instance, it always comes in so handy!</p>

<p>El pasado domingo tuve un dÃ­a espectacular, una buena amiga me pasÃ³ a recoger y me llevÃ³ de paseo al Casco Antiguo, luego fuimos al Mercado en Pacific Mall en donde tuve la oportunidad de comprar el pan de avena por el Baking Factory. Â Es que para mÃ­ la historia de una receta inicia desde que se compran los ingredientes, y cada vez que prepare un sandwich de garbanzos, recordarÃ© el dÃ­a tan excepcional que pasÃ© con mi amiga, cruzando el Puentes de las AmÃ©ricas, solo por un molde de pan artesanal, pero valiÃ³ la pena. Â Ya utilizarÃ© las sobras para hacer tostadas francesas de desayuno, es muy versÃ¡til y ligero.</p>
<p>SÃ© que cuando vean la lista de ingredientes me gritarÃ¡n &#8220;CÃ³mo asÃ­ que 15 ingredientes para una ensaladita de garbanzos!!!!&#8221; Pero les aseguro que cada ingrediente tiene un buen propÃ³sito y esta receta es super flexible, todo, incluyendo los garbanzos, son reemplazables asÃ­ que les invito a que utilicen esta receta como una base para cuando les inspire hacer un sandwich vegetariano o un dip de leguminosas.</p>

Pan (sugiero uno que se pueda tostar fÃ¡cilmente)<br />
2 Tazas de Garbanzos (1 Lata/15 oz)<br />
3-4 cdas de Mayonesa<br />
1-2 cdas de Crema Agria<br />
2 cdtas de Alcaparras, picaditas<br />
1 cdta de Mostaza Dijon<br />
1 cdta de Aceite de Oliva<br />
1 cdta de Jugo de LimÃ³n<br />
1 hoja de Alga (nori), tostada y picadita<br />
1 Chalote (shallot) pequeÃ±o, picadita (2 cdas)<br />
3 dientes de Ajo, picaditos en purÃ©<br />
1 cdta de Braggs Aminos o Salsa de Soja<br />
3 cdas de Nueces<br />
Sriracha u otra salsa picante al gusto<br />
Eneldo fresco, Sal y Pimienta al gusto</p>

Instrucciones</strong><br />
1- En un bol combinar el jugo de limÃ³n con el ajo picadito, la mostaza, alcaparra, el chalote y el aceite de oliva.<br />
2- Â Agregar los garbanzos en cuatro partes, y con la cuchara hacerles purÃ© (si tienes un procesador bÃ¡sicamente puedes poner todo junto y procesar hasta que tenga la consistencia de tu preferencia).<br />

3- Ya con el garbanzo completamente molido, agrega el resto de los ingredientes e incorpora todo con una cuchara grande.<br />
4- La Sriracha es opcional, a mÃ­ me gusta mucho el sabor que agrega a los garbanzos, solo que si no eres amante del picante ten mucho cuidado y con cada agregada, prueba la mezcla.<br />
5- Tostar el pan con mantequilla por ambos lados, en temperatura media alta, esto te asegura una superficie tostadita y caliente, con un pan suave por dentro.</p>
<p>La calidad de tus ingredientes marcan la diferencia en los sabores de tus sandwiches, un buen pan, buena mayonesa, hierbas frescas, todos son detalles para crear un plato sencillo, pero delicioso.</p>

<p>IÂ don&#8217;t always findÂ Panamanian ingredients in the US, luckily, yuca is one of those that you can even find at a Whole Foods. Â To stay in budget,Â I usually get my yuca from Mexican supermarkets, sometimes I buy it fresh, but I always getÂ a frozen package to keep extra in the freezer, you never know when the yuca cravings might come.</p>

<p>There are so many ways to serveÂ this dish, by itself, or with slices of a melting salty cheese, queso fresco, and/or fried eggs. Â Maybe chorizo, roasted chicken, or fried fish. I can enjoy it for breakfast, lunch or dinner, it&#8217;s pretty versatile.</p>
<p>You can prepareÂ yuca al mojo in many ways, I have friends who use orange juice, or lime juice, but this is one of myÂ favorite ways to make it at home:</p>
<h3 style="text-align: center;">My Yuca Al Mojo Recipe</h3>
<p>Serves 4<strong><br />
Ingredients:<br />
</strong><span style="line-height: 1.5;">2 tbs Green Onions, chopped<br />
</span><span style="line-height: 1.5;">2 tbs Garlic, chopped (4-5 garlic cloves)<br />
</span><span style="line-height: 1.5;">1 Culantro leaf (if you can&#8217;t find, add more cilantro or parsley)<br />
</span><span style="line-height: 1.5;">2 tbs Cilantro,Â sliced<br />
</span><span style="line-height: 1.5;">Lemon Juice<br />
</span><span style="line-height: 1.5;">2 lbs Yuca, boiled (If you&#8217;re using fresh yuca, instead of frozen, <a title="How to peel yuca" href="http://youtu.be/5TLTkNf-nc8?t=2m40s" target="_blank">here is a video demonstratingÂ how to peel it first)</a>.<br />

<p><strong>Directions:</strong><br />
&#8211; While you&#8217;re boiling the yuca, prepare your ingredients.<br />
&#8211; SautÃ© the garlic in olive oil at low heat (less than 2 minutes), add a bit of butter, chopped scallions, and pinch of salt, and remove before they go too brown (don&#8217;t let it burn or you&#8217;ll have to start again).Â (reserve the garlicky oil/butter).<br />
&#8211; Â On the same pan with olive oil (add extra if necessary), increase temperature to medium-high heat, crisp the boiled yuca, (I like mine crispyÂ itÂ on all sides).<br />
&#8211; Â Once the yuca is browned to your preference, add pinch of salt, 1 tbs of butter, stir, lower heat, add garlic, scallions and fresh herbs.<br />
&#8211; Turn off the heat and add lemon juice to taste (I like mine a bit sour so I go with half a lemon).</p>

<p>The key to a good Yuca Al Mojo, imho, is about quality of ingredients, even if your yuca is fresh, if you end up using a crappy olive oil, non fresh herbs, etc, you will end up with a &#8216;meh&#8217; dish. Â I used frozen yuca #NoShame, boiled it in salty water, and cooked it with great oils + fresh herbs, it makes the whole difference in the world.</p>
<p>As you can see, my result is different from most recipes you&#8217;ll find around, I add A LOT of herbs, I fry theÂ garlic, and I also add butter!</p>
<p>I suggest eating thisÂ dish right on the moment, if you have leftovers (which I doubt it&#8217;s going to happen), use them in soups or you can reheat them within two days in an oven, I like to keep my yuca crispy, if it becomes a bit dry after reheating, you can always make more mojo on the side ; )</p>

<p style="text-align: left;">As you&#8217;ve noticed, I haven&#8217;t blogged in the past weeks.Â  The last two weeks were the craziest ones. Including my trip to the beach around Newport, OR.Â  It was such a pleasant break since our arrival to Oregon.Â  You would think that our cross country trip would count as a break, but the truth is that driving all day long to then finally sleep for a few hours (everyday for a week), isn&#8217;t my idea of a break.</p>
<p style="text-align: left;">While at the beach I thought I would get more food writing done, but most of the time instead, I spent a few hours working, staring at the ocean and playing the ukulele, or at least trying.Â  Of course there was also the &#8216;trying-all-the-great-food-around-Newport&#8217; and listening to J to play his music.Â  It was incredible.</p>
<p style="text-align: left;">I didn&#8217;t blog about my food experience around Newport, but I did write reviews for my favorite places on their Google Plus pages.</p>
<p style="text-align: left;">After the trip to the beach and spending so many days without cooking, all I could think of was, healthier food. The balance between eating healthy and delicious has always been a challenge to me.Â  The biggest challenge I believe is eating the proper portion and snacking. Usually every website, specialist, nutritionist has a different idea of what a person should eat, so I&#8217;ve decided to try to keep it simple with my daily diet and just add more vegetables and try not to be afraid of &#8216;good fat&#8217;.</p>
<p style="text-align: left;">Today is day #8 of having no processed foods or refined sugars.Â  I&#8217;ve read all about the different diets and their recommendations pro or against sugar, pro or against dairy, pro or against carbohydrates and I&#8217;d like to think that little by little I&#8217;ll get to the point where I find standard to eating healthy food most of the time, move more (yes exercise) and that I can have a slice of cake and not having to go for 3rd or 4ths.</p>
<p style="text-align: left;">Either way, even if this journey lasts for another week only and I go back to my old ways, I&#8217;ll keep moving, there will be kale and there will be cake too!</p>

<p style="text-align: left;">Tonight I&#8217;ll be having this chili with romaine lettuce leaves, avocado and steamed broccoli. Tomorrow I&#8217;ll try it with mushrooms and garlicky cauliflower.Â  This recipe works wonderfully for tacos. Reduce the chili more time for a thicker consistency. Add 75% dark chocolate to the recipe for a different touch, I swear it adds a nice kick!</p>
<p style="text-align: left;"><strong>Cocinerita 30 mins Beef Chili Recipe<br />
Serves 5 portions<br />
</strong></p>
<p style="text-align: left;"><strong>Ingredients</strong><br />
2 slices bacon, chopped (I used apple smoked Trader Joe&#8217;s)<br />
1 cup chopped zucchini (around medium size)<br />
1/2 cup chopped onion ( 1/2 of a medium size)<br />
3 minced garlic cloves<br />
1 lb grass fed ground beef<br />
1 tbs Sriracha<br />
2 tsp chili powder<br />
1 tsp garlic powder<br />
1 tsp onion powder<br />
2 tsp fish sauce<br />
3 tbs tomato paste<br />
1 cup warm water<br />
1/4 cup chopped cilantro<br />
2 cups mixed baby greens</p>
<p style="text-align: left;"><strong>Directions</strong><br />
In a pot cook the bacon on medium high heat for 2 to 3 minutes.<br />
Add zucchini and cook for 3 to 4 minutes.<br />
Add onion and cook for 5 to 6 minutes and stir every other minute so it doesn&#8217;t stick to the bottom of the pot.<br />
Add minced garlic and stir in together, cook for 1 to 2 minutes.<br />
Add beef, chilli spice, onion and garlic powder.Â  Combine together and add the fish sauce.<br />
Lower the temperature on medium heat and cook for 8 to 10 minutes.<br />
Add tomato paste, sriracha, stir together and add the warm water.<br />
Simmer on low heat for 3 minutes<br />
Turn off the heat, add chopped cilantro and the greens.Â  Stir, taste, adjust seasoning and add more water to your preference.</p>

Sirve 5 porciones</p>
<p style="text-align: left;"><strong>Ingredientes</strong><br />
2 rebanadas de tocineta cortada en trocitos (yo utilicÃ© la de Trader Joe&#8217;s ahumada)<br />
1 taza de zucchini cortado en cuartos<br />
1/2 taza de cebolla cortadita<br />
3 dientes de ajo picadito<br />
1 libra de carne de vaca molida natural (alimentada con pasto)<br />
1 cda de Sriracha (o AjÃ­ Chombo Picante)<br />
2 cdta de chili en polvo<br />
1 cdta de ajo en polvo<br />
1 cdta de cebolla en polvo<br />
2 cdta salsa de pescado<br />
3 cda pasta de tomate<br />
1 taza de agua tibia<br />
1/4 taza de cilantro picadito<br />
2 taza de hortalizas mezcladas (mixed baby greens)</p>
<p><strong>Instrucciones</strong><br />
En una olla cocine la tocineta en temperatura media alta por 2 a 3 minutos.<br />
Agregue el zucchini y cocine por otros 3 o 4 minutos.<br />
Agregue ahora la cebolla picada y cocine por 5 a 6 minutos revolviendo para evitar que se peguen a la olla.<br />
Combine el ajo picado y cocine por 2 minutos.<br />
Luego agregue la carne, las especias de chili, cebolla y ajo en polvo.Â  Revuelva todo bien y agregue la salsa de pescado.<br />
Baje el fuego a media temperatura y y cocine de 8 a 10 minutos.<br />
Agregue la pasta de tomate, sriracha, combine y agregue al agua tibia.<br />
Cocine en temperatura baja por 3 minutos.<br />
apague la estufa y agregue el cilantro y las hortalizas.Â  Revuelva, pruebe, ajuste el sabor y agregue mÃ¡s agua a su preferencia.</p>

<p>My closest grocery store isn&#8217;t a Whole Foods or a Trader Joe&#8217;s anymore, it&#8217;s a Mexican Supermercado and I&#8217;m going to take advantage to learn as much as possible about this cuisine.</p>
<p>Plantain empanadas are popular around several Latin American countries and I decided to make them now that I found lovely yellow plantains at the mercado.Â  They have so many quesos and types of beans so I&#8217;m very excited to try each one of them one recipe at a time.</p>

<p>You can also make this recipe in a big Pyrex just as you would do a meat pie or shepherds pie, but I&#8217;ve decided to make it on empanadas this time.</p>
<p>It&#8217;s important to have a proper ripen plantain for this recipe, if your plantains are green, hard and you really want to cook them today, by all means make this instead &#8211;&gt; <a title="Fried Plantains - Patacones" href="https://www.cocinerita.com/patacones-fried-plantains/"><strong>Patacones (recipe here) </strong></a></p>
<p>I&#8217;ve seen these empanadas served with crema (sour cream) but I prefer a more refreshing sauce like this garlicky/tomato/relish.Â  I served these empanadas with a spinach salad to give it some balance since it&#8217;s such a starchy dish.</p>

<p><strong>Plantains Empanadas con Queso &amp; Refried Beans</strong> &#8211; Makes 4 Empanadas</p>
<p><strong>Ingredients</strong><br />
2 plantains, yellow and ripened<br />
1/2 cup Oaxaca cheese<br />
1/2 cup Refried beans, at room temperature<br />
1/2 cup Queso Blanco Molido (queso fresco)<br />
Frying oil (I used coconut oil)</p>
<p><strong>Directions:</strong><br />
1.Â  Cook the plantains until they are soft enough to break with a fork.<br />
2.Â  I cooked the plantains inside the microwave <em>(follow the pictures above).</em><br />
3.Â  Cut the tips off and slice 1-2mm inside in the middle with a knife <em>(pic above #2).</em><br />
4.Â  Once the plantains are really soft, peel the skin off and mash with a fork. <em>(pics bellow)</em><br />
5.Â  Add two tablespoons of queso molido to the mashed plantains and a pinch of salt, combine and divide the masa on four portions.<br />
6.Â  On an oiled parchment paper spread the plantains and make a circle shape, flat it up with your fingers and fill with 1.5 tbs of refried beans and pieces of the Oaxaca cheese and seal it helping yourself with the oiled paper.<br />
7.Â  Heat up the oil in a pan and fry the empanadas on both sides medium temperature 4-6 minutes.</p>

&#8211; You can saute the empanadas or deep fry them, it&#8217;s up to you.Â  I modified the shape of my empanadas so that I wouldn&#8217;t need to deep fry them.<br />
&#8211; If you want to be quicker, use the masa and shape in balls, fry and serve with the Oaxaca cheese (melted) and the refried beans on the side. <em><strong>(look at the picture below)</strong></em></p>

<p>I love street food.Â  I know people get a bit nervous on the clean aspect of hot dog carts and food carts in general, but that&#8217;s something I try not to think about, if not, I&#8217;ll only end up eating at home.Â  Of course one can also do research to see inspections of food carts and restaurants, but in the end, you always take a risk when you eat outside of your home.</p>
<p>Now back to the fun part!</p>
<p><strong>Three features I always look for in a hot dog:</strong><br />
&#8211; steamed or grilled warmed buns (potato bread, or J&#8217;s favorite: challah bread)<br />
&#8211; delicious options for hot sauce (<a title="Aji Chombo - Panamanian hot sauce" href="https://www.facebook.com/pages/Sist%C3%A1-100-Natural-Pepper-Sauce-Picante-Chombo/113764261990571" target="_blank">ajÃ­ chombo SistÃ¡</a>, Cholulas or Sriracha)<br />
&#8211; a crunchy texture (raw cabbage, chips, salted toasted nuts!)</p>

<p>I&#8217;m not sure about the price of a hot dog from a food cart back in Panama but I remember getting one after school for 25-35 cents depending on the size. Â There were these &#8216;Colombian&#8217; style huge hot dogs I&#8217;d buy on Saturdays at $1.00 and that&#8217;s when I tried pineapple for the first time on my hot dog. It was love at first sight!</p>
<p>While working at Lyon hall I was lucky to learn a few trades, making our own hot dog buns, sauerkraut, mustard and frankfurters. It was an art, brushing butter on the bun, toasting it while the sausage is almost done in the grill. It was such a delightful feeling, plating the dog different options for mustard.</p>
<p>There are many things I learned from Chef Andy at Lyon Hall such as pickling and making the best dressing and mustards. I&#8217;d be looking forward to the change of the season just to see which mustard he was going to create; rhubarb, strawberry, cherry, peach, bacon caramelized onion, stout, classic yellow, grape, I mean he made amazing types of mustard with every single fruit that was available.</p>

TOPPINGS</strong></p>
<p>It drives me nuts when I go to a place that only offers the boring <a title="French's Yellow Mustard" href="http://www.americansweets.co.uk/ekmps/shops/statesidecandy/images/french-s-classic-yellow-mustard-226g-8oz-bottle-10885-p.jpg" target="_blank"><strong>French&#8217;s yellow mustard</strong></a>, or worse, when they offer a Hot dog inside of a cold bun, what&#8217;s going on?!</p>
<p>I know it&#8217;s a cultural thing, maybe? People eating cold cookies, cold muffins, sandwiches and hot dogs. The only cold sandwiches I love are egg salad, chicken tuna or their vegetarian versions with chickpeas. Don&#8217;t you dare giving me a cold club sandwich, or a hot dog in a cold bun.</p>
