Upside Down Pineapple Cake РVolteado de Pi̱a

Siempre decido hacer este dulce cuando me encuentro con hermosas Piñas llamando mi nombre en el supermercado.

Ellas me dicen “Estoy deliciosa, ven es como estar de vuelta en Panamá, cómemeeee”, y después de eso ya sé que es el momento indicado para hacer un ¡Volteado de Piña!

Así que si tienes una Piña en casa, y está bien los perezosos que quieran utilizar piña de lata lo pueden hacer, pero no les garantizo un sabor ¡Piñoso delicioso!  Tienes que hacer esta receta, te tienes que comer el resto de la piña el día siguiente y tienes que limpiar y remover la piel de la piña y guardarla en el congelador para una receta de Flan de Arroz con Piña que les compartiré otro día.

This cake I always decide to bake when I see beautiful Pineapples calling my name in the supermarket.  They say “I taste delicious, it’s like going back to Panama, eat meee”, so after that I know it’s time for Upside Down cake!

So if you have a fresh pineapple at home, ok you lazy people who don’t want to cut it and want to use the can version, you can also do it hehe, but I do not guarantee amazing pineapplelish flavor!  You have to bake this recipe, you have to eat the rest of the pineapples next day and you have to wash the skin of the pineapple and reserve it in the freezer for another recipe I will share another day) Pineapple Rice Flan!”


NOTA: Recomiendo siempre tener estos ingredientes básicos en casa: huevos, leche, harina, aceite, mantequilla (sin sal), chocolate de algún tipo, crema agria o yogurt, o en mi caso media crema!  Oh y atomizador no adherente.

Y bueno aquí les dejo la receta y créanme que la única parte que toma mucho trabajo es la de cortar y pelar la piña, el resto es como dice mi mami “¡Chicha de Piña!”

Receta:

Para el caramelo:

1 barra de mantequilla sin sal

1 piña

1 taza de azúcar morena

Para el dulce:

1 1/2 tazas de harina

1 3/4 tazas de azúcar

3 cucharadas de maizena (almidón de maiz)

3/4 cucharadita de Polvo de Hornear

3/4 cucharadita de Sal

2 barras de mantequilla sin sal

4 huevos + 1 yema  a temperatura ambiente

1 cucharadita de extracto de vainilla

1 cucharadita de extracto de piña (opcional)

1/4 taza de crema agria

1/2 taza de media crema

NOTE:  Basic ingredients you should always have at home, eggs, milk, flour, oil, butter, chocolate of some sort, and sour cream or yogurt, or in my case half cream!  Oh non-stick spray comes handy too!

Well here is the recipe and trust me the only part that takes time is slicing and peeling the pineapple the rest is like my mom always says “chicha de piña” (pineapple juice meaning is really, really, really super easy).

Receta:

Caramel Topping:

1 stick unsalted butter

1 Fresh Pineapple (select one that smells a little sweet and that looks plump, for more info click here).

1 cup light brown sugar

Cake:

1 1/2 cups all purpose flour

1 3/4 cups of sugar

3 tablespoon corn starch

3/4 teaspoon Baking Powder

3/4 teaspoon Salt

2 sticks unsalted butter

4 eggs + 1 egg yolk  room temperature

1 teaspoon vanilla extract

1 teaspoon pineapple extract (optional)

1/4 cup sour cream

1/2 cup half cream (table cream)

Instrucciones

Tener los huevos y la mantequilla a temperatura ambiente.   Pre calentar el horno a 325F grados.

Tener un molde roceado con anti adherente de 10″ diámetro  2″ de altura, o como en mi caso yo utilicé 1 molde de 8″ y 4 ramekins.

Derretir 1 barra de mantequilla en una sartén con el azúcar morena y cuando esté todo disuelto como una salsa vertir sobre molde/es y luego colocar las rodajas de piña (yo corto mi piña en pedazos porque me gusta que todo el dulce tenga piña encima jeje).

Reservar a un lado y empezar la mezcla para el dulce.

Tener 2 envases, uno para ingredientes secos (combinar harina, polvo para hornear, sal) y reservar.

En el otro cremar la mantequilla (batir mantequilla hasta que se vea clarita y suavecita con el azúcar).  Agregar un huevo a la vez y luego la yema, batir todo con el extracto de vainilla y de piña.

Luego por partes agregar la crema agria y un poco de los ingredientes secos previamente combinados y luego la media crema y el resto de los ingredientes secos.

Vertir mezcla sobre molde/es sobre el molde con caramelo y piña e introducir en el horno por 1 hora o 1:15 horas, después de primeros 30 minutos dar vuelta al molde para que el calor del horno sea más parejo.  Recuerden que si utilizan molde más pequeños el tiempo varía, solo tengan un palito para introducir en el medio y que salga con poquitas migajas y así sabrás que está listo el Volteado.

Instructions

Make sure eggs and butter are room temperature.  Pre heat oven 325F.

Non stick spray on a 10″ diameter 2″ high sides or like I did use a 8″ one and 4 ramekins.

Melt butter and brown sugar in a pan on the stove and when it dissolves pour into the cake pan and then add the pineapple slices.

Reserve and start the cake batter

Bring 2 bowls, in one mix the dry ingredients (flour, baking powder and sal), set aside.

Cream the butter (beat butter and sugar until light and fluffy).  Add an egg at a time and at the end the yolk, keep beating and add extracts.

Add the sour cream and table cream in batches along with the flour mixture to the butter mixture.

Por batter into the pan with the caramel and pineapple, bake for 1 hour or 1 hour and 15 minutes, after the first 30 minutes go check and turn around the pan so the cake gets a balanced heat.  Remember that if you use a smaller cake pan the time will change so just keep an eye and with a tester check it comes clean with some crumbs on it, that means the cake is ready!

Dejar enfriar por 20 minutos y luego voltear y servir tibio con un vaso de leche muy frío o como a mi cuñada le gusta con una bola de helado de vainilla!

Si quieres tener variaciones, utiliza un extracto de naranja, o utiliza nueces molidas para la mezca en vez de maicena, también puedes agregar ron, el cielo es el límite con esta receta!

Cool cake in a rack for 15 minutes, turn into a platter and serve warm with a very cold glass of milk or like my sister-in-law loves it with a ball of vanilla ice cream!

If you want to have alternatives, use vanilla extract or replace the corn starch for ground nuts, you could also add rum, the sky is the limit with this recipe!
